The desire to shop, buy and stay local is more prevalent than ever before, and we can safely say that Summer is the peak season for all the above. There’s a wealth of wonderful things to eat and drink that are made or grown in our own backyard, and this issue offers up plenty of ways to put them on full display. June, July and August shine a spotlight on fresh Ontario fruit; in “Pick of the Crop” (on page 76), we’ve developed recipes where you can swap in whichever fruit is at its peak of freshness. Start with our cover star, easy homemade ice cream, and move through a crisp cobbler, silky tart and a crowd-pleasing cake. One of my favourite summer rituals is the simple pleasure of that first toasted local tomato sandwich. When you’ve enjoyed a couple of those, move on to any of Christopher St. Onge’s delectable tomato recipes that capture the in-season perfection of these seasonal gems (page 82). Pickles continue to trend and, starting on page 57, we share a recipe for making your own, plus delicious ways to use them up in cocktails and food—brine and all! Ontario-grown Kirby Cucumbers are in season now and are the best choice for the best pickles. If you’re planning to vacation in your backyard this year, we’ve got your meals covered whether you’re a BBQ master or more of a picnic person. FRESHEN UP Silicone ice-cube trays have a bad habit of picking up off smells. As long as they’re 100% silicone, deodorize by washing them in hot soapy water then baking on a tray in a 350ºF (177ºC) oven for 30 minutes. If they still smell off, continue baking, checking every 10 minutes, until it’s gone.

drinker in Ontario. Here are five lighter, refreshing brews—all local—to stock in your fridge and cooler this summer.

There’s a new pepper in town, and its name is Habanada. Developed at Cornell University by Michael Mazourek—of Honeynut Winter squash fame— it’s like a habanero with the spice turned down to zero, so you get all the fruity, floral flavours without the tongue-searing heat. PICNIC IN THE PARK
Corn Nut Fun Dip
We love a creamy, cheesy veggie dip, but not when it’s 30°C out and it’s been in your backpack for an hour. Enter fun dip, a dry, flavour-packed mixture for dunking crudités. Taking inspiration from Sohla El-Waylly’s Ranch Fun Dip, we created our own take with crushed corn nuts as the base. 1 tbsp (15 mL) fennel seeds 1 cup (250 mL) corn nuts 1/2 cup (125 mL) nutritional yeast 1/2 tsp (2 mL) Aleppo pepper or dried chili flakes 1. Heat a small frying pan over medium. Add fennel seeds. Toast, stirring often, until fragrant, about 1 minute. Transfer to a small plate to cool. 2. Combine cooled fennel seeds, corn nuts, nutritional yeast, Aleppo pepper or chili flakes, and salt in a large zippered plastic bag. Pound with a rolling pin until corn nuts are very finely crushed and no pieces are bigger than a lentil. 1/2 tsp (2 mL) fine sea salt Raw vegetables, such as cucumbers, celery and fennel, cut into wedges and spears for serving
3. Serve in a wide, low bowl with vegetables on the side for dipping.

PICNIC IN THE PARK
We’ve married two favourite picnic staples into one amazing pasta salad. To get that deli flavour, we’ve used muffuletta spread, but you could just as easily use Chicago-style giardiniera or Calabrese-style antipasto—just look for hearty vegetables (like cauliflower, carrots and celery) pickled in vinegar and preserved in oil. Untossed pasta salad will keep, covered and refrigerated, for 2 days. Return to room temperature before serving. 1 lb (455 g) dried orecchiette pasta 1/4 cup (60 mL) olive oil 1/3 cup (80 mL) red wine vinegar 1 garlic clove, minced 1 tsp (5 mL) dried oregano 1/4 tsp (1 mL) salt Freshly ground black pepper to taste 2 cups (500 mL) cherry tomatoes, halved 1 tub (200 g) mini bocconcini, drained Everything-but-the-Hoagie Pasta Salad
1. Bring a large pot of gen erously salted water to a boil. Cook pasta to al dente, accord ing to package directions. Drain and rinse under cold water. 2. Whisk oil, vinegar, garlic, oregano and salt in a large serv ing bowl. Season with pepper. Add pasta, tomatoes, cheese, muffuletta spread, olives and meat. Stir to coat, then taste and season with more salt and pepper, if necessary. Pile lettuce and basil on top.
1/2 cup (125 mL) jarred muffuletta spread, oil drained if necessary 1/2 cup (125 mL) sliced green olives 4 oz (115 g) sliced mortadella, torn or cut into bite-size pieces 4 oz (115 g) sliced spicy Genoa salami or soppressata, torn or cut into bite-size pieces 4 cups (1 L) shredded iceberg lettuce 1 cup (250 mL) loosely packed basil leaves, torn
3. Just before serving, toss let tuce and basil with rest of salad.

Triple Dill Chicken Salad Sandwiches
WHAT TO SERVE Tawse Quarry Road Organic Riesling VQA VINTAGES ESSENTIALS 198853, $24.95 Riesling is a classic choice to pair with dill; why not go for a first-class wine with such a fabulous sandwich, like one of Ontario’s best?
1 tbsp (15 mL) grainy mustard Salt and freshly ground black pepper to taste Dill pickle slices 8 slices caraway or light rye bread Dill pickle chips to garnish 1. In a medium-size mixing bowl, combine pickle brine and onion. Set aside while you prep the remaining ingredients, about 10 minutes. 2. Add chicken to bowl, stirring until brine is absorbed. Stir in sour cream, mayonnaise, celery, pick les, dill and mustard. Season to taste with salt and pepper. Divide mixture between 4 slices of bread,
about 3/4 cup (175 mL) per sand wich. Top with pickle slices then with remaining bread slices. Wrap tightly in plastic or parchment. Refrigerate at least 2 hours or up to 2 days. 3. When ready to serve, remove top slices. Add a handful of chips then close sandwich again. Cut in half, if desired, and serve immediately.
Chicken salad sandwiches are a picnic classic, and for good reason: they’re fast, easy and travel well. The only thing missing is texture, which we’ve solved by adding a generous handful of dill pickle potato chips. You can use any brand, but we like Kettle Brand’s Krinkle Cut for the extra crunch factor. 1/4 cup (60 mL) dill pickle brine 1/4 cup (60 mL) finely chopped red onion 2 rotisserie chicken breasts, skin removed, cubed, about 3 cups (750 mL) 1/4 cup (60 mL) sour cream 1/4 cup (60 mL) mayonnaise 1/4 cup (60 mL) finely chopped celery 1/4 cup (60 mL) finely chopped dill pickles 1/4 cup (60 mL) finely chopped fresh dill

Grilled Cucumber Gin & Tonic
The classic union of gin and cucumber gets a new twist by grilling the cukes first. Doing so adds a whiff of smoke to a classic G&T, while introducing a tiny splash of elderflower liqueur brings it all together. Since you’re only grilling two cucumber spears, it makes sense to piggyback on another grilling session, if possible, or use a grill pan on the stove.
1 mini cucumber 1/4 oz elderflower liqueur 2 oz London dry gin 1/2 oz strained fresh lime juice 4 oz tonic water, chilled
1. Cut cucumber in half lengthwise. Save one half for another use, then cut other half lengthwise to make two spears. 2. Preheat half of grill or grill pan on high. Clean and lightly oil grate. Pat cucumber spears dry with paper towel, then grill all three sides until lightly charred, about 1 minute per side. Transfer to a plate. Cool completely. Chop 1 spear and save the other for garnish. 3. Place chopped cucumber and elderflower liqueur in a cocktail shaker. Muddle. Add gin, lime juice and 3 ice cubes. Shake for 5 seconds. Fine-strain into a chilled highball glass filled with ice. Top with tonic water. Lightly stir. Garnish with grilled cucumber spear.

Grilled Peach Julep A classic Mint Julep—typically made with bourbon—becomes an all-new summer sensation by infusing Canadian whisky with grilled peaches. It’s so delicious that it will be hard to go back to a regular Julep. If you happen to have the barbecue on during the cocktail hour, you can grill the peach slice garnish over high heat for about 30 seconds per side. 3 sprigs mint 2 oz Grilled Peach–Infused Whisky (recipe p. 118) 1/4 oz Simple Syrup (recipe p. 115) Grilled peach slice to garnish 1. Trim mint sprigs so they’ll fit in a julep tin or serving glass. Gather mint into a bouquet and rub the bouquet around the inside of a julep tin or glass. Set mint aside. 2. Add Grilled Peach–Infused Whisky and simple syrup to tin or glass. Fill halfway with crushed ice. Holding rim with your fingertips, stir with a mixing spoon in a churning motion for 10 seconds. Fill three quarters with crushed ice. Stir again for 10 seconds. Top with crushed ice, tunnel a hole in centre with a straw. Slap mint a few times against palm of your hand and insert into hole. Garnish with peach slice and serve with a straw.
