FRESHEN UP Silicone ice-cube trays have a bad habit of picking up off smells. As long as they’re 100% silicone, deodorize by washing them in hot soapy water then baking on a tray in a 350ºF (177ºC) oven for 30 minutes. If they still smell off, continue baking, checking every 10 minutes, until it’s gone.

PEEL OF FORTUNE Whether you’re making pie or jam, there is an easy way to peel peaches. Halve, pit and place ripe peaches skin side up on a parchment- lined baking tray. Pop into a 350ºF (177ºC) oven for 3 to 5 minutes. Cool and slide the skins right off.

Hard Shell Topping (p. 115) is the only ice-cream acces sory you’ll need this summer. Made with just chocolate and coconut oil, it transforms into a crackable, fudgy shell in seconds.
