SHARPEN UP Insert the tip of a sturdy oyster knife (not a steak knife or screwdriver) into the hinge of the oyster, that narrow point where the top meets the bottom. Press down into the oyster while twisting the knife until you hear a satisfying pop. Run the blade along the top shell to release the oyster, then gently slide the knife under the oyster to detach it from the bottom.
