Tropical Aperol Thai Tea Whip up a pitcher of this drink inspired by Thai tea (popularized and referred to as Cha-Yen in Thailand), a beverage that usually gets its milky orange hue from Assam tea leaves and condensed milk. We’ve used orange pekoe with condensed milk before swirling in Aperol for a smack of Italian flavour and a milky sunset colour. All of this is rounded out with hefty splashes of tropical pineapple juice and coconut water. Makes 6 cocktails

WHITE LOTUS

The highly anticipated third season of The White Lotus is set in Thailand and is streaming now. We say that’s cause enough to celebrate. With that in mind, we’ve brought together ingredients from the show’s three locations—Hawaii, Italy and Thailand—to create the perfect party sipper. Pre-batched cocktails are the way to go when hosting friends for a binge-watching sesh. Although it’s not essential, you can pull out all the stops and impress your guests by garnishing with an edible or paper white flower, as a nod to the show’s name.

bag black tea such as orange pekoe pineapple juice, chilled

1. Place tea bag in a heatproof measuring cup. Pour boiling water overtop until you get 1 cup (250 mL). Let steep for 3 minutes. Remove tea bag. Cool completely. 2. When tea is cool, pour into a large pitcher. Add pineapple juice, condensed milk, Aperol and coconut water. Stir to mix. Pour into ice-filled glasses and gar nish each with a flower.
