Morocco WHERE Between the striking Atlas Mountains, its wild and windy Atlantic beaches and the vast Sahara, Morocco is truly a visual feast. Best of all, after every action-packed day, visitors can wind down in a culture that has fully mastered downtime. EAT Drawing from a range of influences, including Mediterranean, Berber and Arabic culinary traditions, Moroccan cuisine is inventive, complex and varies from region to region. The country’s most famous dish is tagine, a word that refers both to the meal and the conical- topped earthenware pot used to slowly cook this robust stew. DRINK A key feature of Moroccan hospitality is the Maghrebi mint-tea ceremony, a spread offered morning, noon and night. The ritual celebrates community by bringing friends together to linger over an ever- evolving brew that’s often served with ghoriba dial janjlane , aromatic sesame cookies.

Moroccan Mint Tea takes a little effort to prepare, but its flavour is worth it.

STAY/SEE Spend some quality time in Marrakech, where you can gaze at both palm trees and snow-capped mountains, beyond the salmon-pink clay walls that surround the so-called Red City. The medina (old city) deserves a day or three, with its maze of souks (markets) selling jewelry, spices, carpets and other treasures. At night, hit a hammam spa (bathhouse), where it’s possible to take your stress from 60 to zero in record time.
