PAIR IT WITH Full-bodied reds WHY IT WORKS

The heft and boldness of full-bodied red wines match the bigger flavours and textures of the meat, while the tannins in the wine cut through, and are themselves softened by, the fatty marbling. To get the ideal interplay of fatty meat and full-bodied red, serve firm (higher tannin) wines with seared or grilled meats that see quicker cooking times, and smooth (lower tannin) wines with slow-cooked meats where the fatty marbling has more fully rendered.
