An herbaceous earthiness defines the nose, which presents aromas of burnt sage, top soil, cracked black pepper, bing cherry and dried cranberries. The palate features cherries, stone fruit, orange peel and more herbs, before a spicy, peppery, earthy finish. Satisfying, classic. The result is a big-boned, robust wine with concentrated flavours dominated by dark fruit. The tannins are still quite firm, but manageable. Europe’s only surviving grazing pigs (pigs allowed to roam and feed as they will), trinca bolotas play a major role in preserving Alentejo’s oak forests and are a celebrated part of the region’s gastronomical heritage.
