All of Nova Scotia’s vineyards fall within 20 kilometres of the Atlantic Ocean, and this proximity plays a huge role in determining what grapes can be grown here and in defining the character of the wines made. The cold, volatile weather has seen Nova Scotia’s winemakers focus on cool-climate grapes such as Chardonnay and Pinot Noir as well as a number of winter-hardy hybrids like L’Acadie Blanc, Seyval Blanc, Lucie Kuhlmann and New York Muscat, which form the backbone of this region’s aromatic, fresh, characterful white wines. The extreme cool-climate conditions are ideal for premium sparkling wines, which require high levels of natural acidity.
