Nestled among the forested moraines, golf greens, ski resorts and spa retreats of the Hockley Valley in south-central Ontario is Adamo Estate Winery : a small boutique operation with vineyards planted to classic vinifera and hybrid grape varieties. Rounding out their portfolio of limited-run wines from estate vineyards are the Bistro series wines made with fruit from Niagara growers. The Bistro Red is a blend of Cabernet Franc, Cabernet Sauvignon and Merlot along with splashes of Malbec and Petit Verdot, with 20% of the wine matured for 10 months in French oak.
In the heart of Norfolk County near the shores of Lake Erie in southwestern Ontario, you’ll find Burning Kiln Winery : a family-owned affair on the site of a former tobacco farm that uses repurposed tobacco kilns in the production of its wines. The Cureman’s Chardonnay is made with hand-sorted, whole-cluster fruit grown on two vineyards that border Lake Erie. After vinification and ageing for nine months in French oak, the wine is bottled without any malolactic conversion for maximum zip and vibrancy.
A short 20-minute drive south of popular beach destination Grand Bend brings you to Shale Ridge Estate Winery & Cidery . Founded by third-generation farmers, it’s located on the shores of Lake Huron in southwestern Ontario. As the name suggests, they craft premium wines and ciders using fruit grown on their estate or neighbouring farms. Their SR Cabernet Sauvignon is unoaked, keeping the focus on the character of the fruit.
