HIDDEN BENCH BÉTON CHARDONNAY 6 VQA West Niagara, Niagara Escarpment, sustainable Made from 100% estate fruit organically grown on the Beamsville Bench. Fruit is whole-bunch pressed before fermentation in concrete using ambient yeast, after which the wine is aged 10 months in concrete and an additional eight in stainless steel before bottling. Expansive and textured, it evokes lemon oil, crunchy yellow apple, oyster shell and sea salt and features a long, luxurious finish. Pair with crab cakes with citrus aioli. ROSEWOOD RIESLING AF 6 VQA Twenty Mile Bench, Niagara Escarpment, unfined This wine is fermented in stainless steel, with a small portion undergoing arrested fermentation (which halts fermentation and keeps a dash of residual sugar) while the rest is fermented dry. The blended wine is aged on the lees in stainless steel for eight months. The result is a juicy, bright, fresh wine with apple, grapefruit, pear, citrus and notable Twenty Mile minerality.
