Domaine Queylus crafted their 2025 rosé from 100% Cabernet Franc, which they picked early to optimize bright natural acidity in a warm vintage. The berries were direct-pressed whole in the classic Provence style, and vinification took place in stainless steel without malolactic conversion. Each of these choices was made to maximize freshness, elegance, expressiveness and vibrancy. The resulting wine is lip-smackingly dry and bursting with white flowers, citrus peel and wild strawberry, with a lovely mineral undertone.

Stratus also made a 2025 rosé entirely from Cabernet Franc, but with a twist: theirs was vinified partly in the whole-berry direct-press method and partly in a “saignée” style, with the berries given eight hours of skin contact. The unique production method created a wine with enhanced intensity and depth of colour, while retaining elegance and vibrancy. The finished wine delivers fresh flowers, juicy berry fruit, crunchy bell pepper and subtle spice.

Fielding used a blend of Gamay (78%) and Pinot Noir (22%) for their 2025 rosé. Each grape variety was picked with peak crispness and freshness in mind, and the wine was vinified in stainless steel with a short period of skin contact before press ing. After blending and bottling, the wine is bright, crisp and elegant, with lively notions of raspberry, strawberry, citrus and tangerine.
