Andrea Perez Castillo FLAT ROCK CELLARS
With a degree in agricultural engineering from the University of Zacatecas in Mexico and a master’s in viticulture and oenology from the Polytechnic University of Madrid in Spain, Perez Castillo has a global perspective on wine. She did harvests in Chile, Mexico, New Zealand and South Africa before working alongside Niagara wine icon Marlize Beyers at Hidden Bench. Perez Castillo became winemaker at Flat Rock in 2023.

Enthralled by the wine world from a young age, Otting worked her first vintage while in high school and was inspired to enrol in Niagara College’s winery and viticulture program. Following vintages in South Australia and Tasmania, she returned to Ontario and was hired by Tawse Winery as a lab analyst before joining the winemaking team. She’s since taken up the mantle as head winemaker for Tawse and Redstone.

Born and raised on a Niagara farm that’s been in her family since 1867, Harber has always been sensitive to the subtleties of the land. She took over the family business in 2004 and replanted the vineyards with Cabernet, Merlot, Chardonnay and Riesling. Over two decades later, Ravine remains a family-run winery and restaurant that celebrates its history and community. Having grown up in a small town just outside Niagara, Silverthorne has always loved the region. After graduating from Niagara College, she did stints at multiple local wineries, starting as a lab technician and harvest hand before working her way up to winemaking. She joined Konzelmann Estate Winery in Niagara-on-the-Lake as winemaker in 2021.

Eschewing the use of chemical herbicides, pesticides or fertilizers in the vineyards, she prioritizes the health and vitality of the soils, the air, and the people who work there. Her iconoclastic use of French and Spanish oak shatters the norm of relying solely on American barrels in Rioja.

An entrepreneurial spirit and the daughter of a Spanish grape-grower, Victoria Pariente named the winery she founded in 1997 after her father. With the estate firmly established as a leading light of the Rueda region, in 2012 she handed it over to her children, Martina and Ignacio. The winemaking torch having been passed from mother to daughter, Martina continues to make the wines today.

Spending her childhood on her family’s farm in Tuscany, Elisa Fanti fell in love with the vineyards and olive groves. After obtaining a degree in agronomy, she began making wine in collaboration with her father and took over vineyard management, splitting co-ownership of Tenuta Fanti with her father and her sister, Elena. Under her watch, the family’s 50 hectares of vines and 30 hectares of olive trees have been certified organic.
