TAWSE SPARK QUARRY ROAD BLANC DE BLANCS BRUT SPARKLING 2017 6 VQA Vinemount Ridge, Niagara Peninsula, Ontario, traditional method Aged for seven years on the lees, this wine has a dynamic, vibrant character, with juicy apple, lemon tart, orange zest, and a sharply defined minerality.

Enthralled by the wine world from a young age, Otting worked her first vintage while in high school and was inspired to enrol in Niagara College’s winery and viticulture program. Following vintages in South Australia and Tasmania, she returned to Ontario and was hired by Tawse Winery as a lab analyst before joining the winemaking team. She’s since taken up the mantle as head winemaker for Tawse and Redstone.
