LANGUEDOC DOMAINE DE LA BAUME ELITE D’OR PAYS D’OC CHARDONNAY/ ROUSSANNE IGP Domaine de la Baume ferments and ages this wine in 50% new and 50% once-used barrels. It’s rich and buttery, with tangy lemon and orange notes accompanied by hazelnut, vanilla, toast and mineral. From the only Burgundian area permitted to produce Sauvignon Blanc, Saint-Bris is a singular style from an already unique place. Furthermore, 40% of the juice here was aged in oak; a rarity for Sauvignon Blanc. Sourced from vines averaging 23 years of age, this crisp, refreshing, lively wine shows lemon, peach, noted saline minerality, and a hint of tropical fruit. Pair with seafood. It’s a gentle, tender style with rounded shoulders and bright, balanced acidity. A small portion was made and matured in old barrels, which helped soften its angles. It also underwent some lees stirring to increase palate richness. The 2024 is a ripe, attractive and classical Sancerre that overcomes the di—iculties of the harvest. Drinking window: 2025-2029.
