BURGUNDY’S BOUNTY Burgundy, one of the world’s oldest and finest wine regions, is the ancestral home of Chardonnay and Pinot Noir . These celebrated wines, synonymous with refinement, authenticity and terroir, are global benchmarks.

Burgundy stretches nearly 300 kilometres from Chablis in the north (about 180 kilometres southwest of Paris) to its southernmost growing area, Mâconnais . Most of Burgundy’s wines come from east-south east-facing sloped vineyards in a 120-kilometre section made up of four principal growing areas collectively known as Côte d’Or: Côte de Nuits, Côte de Beaune, Côte Chalonnaise and Mâconnais. Chablis’s northern location makes it cooler than the rest of Burgundy, and its ancient Kimmeridgian limestone soils have a high percentage of fossilized sea life. Chablis is the gold standard for crisp, cool- climate, mineral-inflected Chardonnay. These wines rarely receive oak treatment and are strikingly different from Chardonnay grown elsewhere in Burgundy, many of which are creamy and rich with significant oak influence. Monks working Burgundy’s vineyards during the Middle Ages began to recognize that individual vineyard plots produced unique-tasting wines. Their precise observations resulted in the establishment of the complex mosaic of small parcels, each graded and ranked in terms of quality and style, that make up Burgundy. This degree of specificity often causes confusion, as many wine labels do not indicate white or red, or that the bottle contains Chardonnay or Pinot Noir, but merely state the village or vineyard where the grapes were grown.

BLASON DE BOURGOGNE SAINT-VÉRAN 2023 AOC Saint-Véran produces only Chardonnay, and the wines bear a close similarity to those of its renowned neighbour Pouilly-Fuissé, which actually divides the vineyards of Saint-Véran into northern and southern sections. A popular choice in Parisian bistros and cafés, Pouilly-Fuissé pairs beautifully with simply prepared roasted chicken or grilled fish. EXPERIMENTAL ROCK One of Niagara’s shining stars, Flat Rock Cellars isn’t content just playing the old hits. On the contrary, Ed Madronich and his team are always experimenting. The latest result? Never-before- seen wines we had to scoop up!

Samples from different vineyard parcels are carefully assessed before blending.

First, the Hexa Pinot Noir 2020 , which was available at the winery until we were so impressed we scooped it all up. Fruit for this wine comes exclusively from the 17th Street Block; the easternmost part of the Flat Rock Vineyard. Planted in 2001, the vines there are some of the oldest on the property, with root systems reaching down deep through the soil to Flat Rock’s signature dolomitic limestone. The ripeness of the vintage allowed for partial whole-cluster fermentation, and 10% of the wine was matured in French oak – half being Cadus barrels (Ed’s personal favourite). Next up is the Amplify Dry Riesling 2023 , which was so successful as part of the Monolith Series in vintages past

Since the beginning more than 20 years ago, innovation and experi mentation have been at the heart of Flat Rock. While producing world class flagship wines (under the Capstone Series and Foundation Series banners), owner Ed Madronich and his winemaking team are always trying new approaches, testing new techniques and mixing new blends. So, when inspiration strikes, they’re ready to catch lightning in a bottle. Recently, Ed and the team have been so impressed by the results, they’ve decided to offer some of these experimental products to customers. Introducing the Monolith Series. These small-lot wines are so rare that they’re available only at Vintages and nowhere else – not even the winery!

Riesling, this wine is vinified and aged in barrel. The wine underwent full malolactic conversion (a process more typical of buttery Chardonnay) and is fermented until bone-dry. The result is an unconventionally rich, full Riesling with a mellow, rather than piercing, acidity. Which brings us to The OC (Oaked Chardonnay) 2023 , a wine that harkens back to an old-school style of rich, buttery Chardonnay. Popular back in the 1990s, this style didn’t shy away from ripe fruit, hefty oak and an opulent, creamy texture. Hand-picked from vineyard parcels that basked in a long, warm autumn, the grapes for The OC reached peak ripeness before being vinified and then matured in brand-new French oak barrels for 21 months.

Finally, we come to the Unite 2023 , an eclectic blend of Pinot Noir and Chardonnay. This is a classic combo in bubbly, but Unite 2023 is a still wine. Unite is a blend of 73% Pinot Noir and 27% Chardonnay, co-fermented over several days with plenty of hand- plunging to coax out the most flavour of the two varieties. The wine then spent eight months in neutral French oak. Besides the Hexa, which was – but is no longer – available at the winery shop, these are never-before-seen wines, all available exclusively at Vintages.
