VQA Niagara Peninsula, sustainable, vegan Gewürztraminer is a delicate grape and susceptible to rot when left to hang late into November, but the risk is worth it. This silky, rich wine has notes of apricot, peach, lemon, wild honey and lychee and makes a delicious alternative to Icewine for gifting or holiday dining. It will evolve into the early 2030s. This lively fizz is a 50-50 blend of Arinto and Loureiro. Part of the blend is aged in wooden barrels to develop rich toasty notes while the rest undergoes secondary fermentation in stainless steel. The final result is a vibrant, youthful yet layered bubbly evocative of juicy white fruit and brioche. Pair with mild cheeses, steamed shellfish or sushi. CANADA – WHITE WINE ONTARIO 13 TH STREET RESERVE VIOGNIER 2023 6 VQA Niagara Peninsula This 100% Viognier is sourced from select vineyards and fermented in 50% French oak and 50% acacia barrels of various sizes for 11 months before being lightly fined and filtered. FLAT ROCK AMPLIFY DRY RIESLING 2023 6 VQA Niagara Peninsula, sustainable

Unusually for Riesling, this was vinified and aged in barrel. The wine underwent full malolactic conversion (a process more typical of buttery Chardonnay) and is fermented until bone-dry. The result is an unconventionally rich, full Riesling with more mellow, rather than piercing, acidity. Calls for a whole roasted chicken stuffed with citrus and herbs. FLAT ROCK THE OC CHARDONNAY 2023 6 VQA Niagara Peninsula

This wine is a blend of 68% Pinot Gris and 32% Gewürztraminer, each racked and fermented separately using wild yeasts. It saw 19 months’ élevage on lees before being blended and bottled. The beautiful nose has suggestions of chamomile, marmalade, melon, rose petal, ginger, white pear, spice, and pie crust courtesy of the élevage.
