Slow-Roasted Salmon with Crispy Capers, Lemon & Everything Bagel Spice If you read over this recipe and think to yourself, wait, this is just an upscale version of a bagel and lox, well, you’re right! We love the combo so much that we turned it into a weeknight meal that’s sure to impress. Serve it with a tart green salad and crusty bread (or bagels!) to round things out.

SHOPPING LIST 0 11/2 lbs (680 g) skinless salmon fillet in one piece 0 5 tbsp (75 mL) olive oil, divided 0 Kosher or fine sea salt and freshly ground pepper to taste 0 11/2 tsp (7 mL) smoked paprika, divided 0 1/2 medium-size red onion, thinly sliced, about 1 cup (250 mL) 0 1/4 cup (60 mL) fresh lemon juice, divided 0 5 cloves garlic, divided 0 1 cup (250 mL) full-fat Greek yogurt 0 2 tbsp (30 mL) capers, drained, patted dry 0 1 tbsp (15 mL) everything bagel spice 0 1 tsp (5 mL) finely grated lemon zest 0 Dill leaves for serving 2. Line a baking sheet with parchment and place salmon on top. Rub with 1 tbsp (15 mL) oil, then season with salt, pepper and 1 tsp (5 mL) smoked paprika. Roast in centre of oven until salmon is opaque and flakes easily with a fork, about 25 minutes. (Insert a paring knife into thickest part and hold for 15 sec onds. If knife is warm where it was inserted, the fish is done.) 3. While salmon is baking, toss onions with 2 tbsp (30 mL) lemon juice and a pinch of salt in a small bowl. Set aside until ready to plate. 1. Preheat oven to 300°F (149°C). 5. Stir yogurt, minced garlic and salt to taste in a small bowl. Scrape onto a large serving platter, then spread to the edges with the back of a spoon. 6. Combine sliced garlic and capers with remaining 1/4 cup (60 mL) oil in a small sauce pan. Bring to a rapid simmer over medium heat. Cook, stirring often, until garlic starts to turn golden-brown, about 3 minutes. Remove from heat, then stir in remaining 1/2 tsp (2 mL) smoked paprika, everything bagel spice, remaining 2 tbsp (30 mL) lemon juice and zest. 7. To serve, break up salmon into large pieces and place on top of yogurt. Top with half the onions, then spoon over oil mixture. Garnish with dill. Serve remaining onions in a bowl on the side. 4. Thinly slice 3 garlic cloves and mince remaining 2 cloves.
