FRUIT WITH PUNCH

Sugar Plum Fairy Cocktail

Herbaceous and perfectly bittersweet, this dark and complex cocktail is a bit brighter and crisper when bubbled with cava, and rounder and slightly sweeter when made using most Proseccos. Sugar, for rimming glass 2 oz prune juice 2 prunes, halved 1/2 oz freshly squeezed lemon juice 3/4 oz amaro, such as Lucano (LCBO 285163, $28.05) 3 oz Prosecco or cava Dried plum, prune or other fruit leather, cut into narrow ribbon 1. Dip edge of a chilled cocktail coupe in a shallow saucer of water then dip in sugar to rim. Set aside. 2. In a cocktail shaker, combine prune juice, prunes, lemon juice and amaro. Fill shaker with ice and shake until thoroughly chilled, at least 15 seconds. 3. Strain through a cone-shaped fine cocktail strainer into rimmed glass. Top with sparkling wine. Shape fruit leather around a straw or wooden-spoon handle into a spiral, and use as garnish.
