AFTER DARK

Leftover lamb is fantastic reheated for naan sandwiches, tacos or a rice bowl with fresh herbs, chilies and a squeeze of lemon.

PORTER AND STOUT

Local Picks Perfect for the solstice and dark as the night sky, stout and porter exude the comfort of a snug pub on a cold day. These dark ales originally hail from the British Isles and are characterized by the inclusion of roasted malts, lend ing robust flavours of chocolate, coffee, molasses and dried fruits.

Muddy York Porter (LCBO 48122, 473 mL, $3.95) is one of the best representations of the style in the province, with a complex set of aromas that belong next to a hearth: notes of chocolate, pecan, marshmallow and a touch of woodsmoke.

Woodhouse Stout (LCBO 485425, 473 mL, $3.65) fits into the Irish Stout category, deliver ing a drying finish thanks to the significant quantity of roasted malts that make up its body. Dark chocolate and espresso flavours balance a mid-palate hit of creamy caramel.

A DEEP, DARK PAIRING Slow-Roasted Lamb Shoulder with Root Vegetables & Gremolata p. 158

Part of the charm of English pubs is the Sunday Roast. Porter and stout are natural com panions for slow-roasted meats, and here the browning of the lamb shoulder and root vegetables matches the toasted malt character and depth of flavour of the beer.
