Pigs in a Cinnamon Roll Blanket with Spicy Maple Syrup Pigs in a blanket are given a revamp for the a.m. with breakfast links wrapped in fluffy cinnamon bun dough. To accessorize, they’re drizzled with icing and dipped in spicy maple syrup spiked with whisky. The sweet, savoury and spicy treats will be a big hit at any holiday brunch. SPICY MAPLE SYRUP 1/2 cup (125 mL) maple syrup 3 tbsp (45 mL) Canadian whisky 2 tbsp (30 mL) unsalted butter 1/2 tsp (2 mL) cayenne pepper PIGS IN A BLANKET 1 tube (226 g) crescent dough 2 tbsp (30 mL) unsalted butter, softened 1/3 cup (80 mL) packed brown sugar 1. Preheat oven to 350°F (177°C). Line a large baking sheet with parchment. 2. For the maple syrup, heat maple syrup, whisky and butter in a small pot over high heat. When it comes to a boil, reduce heat to maintain a simmer. Cook for 5 minutes. Stir in cayenne and remove from heat. Cool completely. Transfer to a glass jar, cover and refrigerate for up to 3 days. Bring to room temperature before serving. 2 tsp (10 mL) cinnamon 8 breakfast sausages 3 tbsp (45 mL) icing sugar 1 tsp (5 mL) water

3. For the pigs in a blanket, open tube of dough and unroll sheet onto baking sheet. Using a butter knife, gently cut perforated edges, but keep rectangle together. Spread butter evenly over dough, going right to edges. In a small bowl combine brown sugar and cinnamon and sprinkle mixture over butter, going right to edges. Carefully pull each triangle away from each other. Place a sausage on widest end of each triangle.

Tightly roll the sausage up and place on baking sheet, point side down. Repeat until all sausages are wrapped. 4. Bake on middle rack until sau sages are cooked through and pastry is golden brown, 20 to 22 minutes 5. While rolls are baking, whisk icing sugar and water in a small bowl until combined.

6. When pigs in a blanket are ready, drizzle with icing and serve hot with spicy maple syrup for dipping.
