Date Turtles Swapping in date for caramel makes for a natural remix of this sweet staple of the holidays. Topped with crunchy pecans, smooth chocolate and flaky salt, these ones are sure to be a new treasured treat. You can add a personal spin with the chocolate, trying everything from white to milk to orange-scented.

36 raw pecan halves 12 Medjool dates

1/2 cup (125 mL) high-quality semi-sweet chocolate chips

or chopped chocolate Flaky sea salt (optional)

1. In a medium-size frying pan, place pecans over medium heat. Cook, stirring occasionally, until toasted and fragrant, 3 to 4 min utes. Transfer to a plate and cool completely.

2. Line a large baking sheet with parchment paper.

3. Carefully split each date in half lengthwise, but keep in one piece. Remove and discard pits. Using a glass and a small piece of parch ment paper, flatten opened dates, sticky side up. Place 3 pecans evenly on each date like spokes on a wheel. 4. Place chocolate in a microwave safe bowl. Microwave on medium heat for 30 seconds then stir. Microwave with 10-second blasts and stir after each blast until chocolate is melted, never letting temperature of chocolate go above 90°F (32°C). 5. Divide chocolate evenly be tween dates, spooning it over the middle of each. Sprinkle with salt if desired and let chocolate harden. Store in an airtight container at room temperature for up to 1 week.
