LCBO NOTES
From our President & CEO
Dear Friends, As we start preparing for the holidays, it’s hard to believe that the end of the year is in sight. This is the season when we take a moment to reflect on the last 12 months and look optimistically towards what lies ahead. And of course, it’s also a time when many of us gather to celebrate with our friends and loved ones. Our team works very hard to make it easy for you to find the right products to mark your celebrations and choose the perfect gifts for the adults in your life. In fact, we start working with our trade partners 12 months in advance to plan our holiday products. It is a collaborative process designed to provide you, our customers, with innovative products and gifts for the holiday season. This year, you can look forward to new holiday flavours in your favourite seasonal products, local craft beer and cider gift packs, sparkling wine and spirit advent calendars and premium product sampler kits, to name just a few possibilities. Be sure to check out the full gifting catalogue at LCBO.com or in your local LCBO store. And if you still can’t decide what to purchase, a gift card remains an easy option that will please even the most discerning wine, beer or spirit aficionado on your list. We would love to hear your feedback on our gifting offerings, so I encourage you to complete our “voice of the customer” survey found on the back of your LCBO receipt. Don’t forget, you also benefit when you shop with your Aeroplan card at the LCBO over the holidays. When you purchase a product on bonus between November 6 and 26, you will be entered into a contest for a chance to win Air Canada flights. If you’re shopping online, make sure to check out our one-day mega Aeroplan promotion on December 7, with great offers to help with all your gifting needs. So while you are completing your holiday gift list, you’re also getting closer to earning the next vacation, gadget or LCBO gift card of your own. For those looking to simplify the shopping process, we continue to offer convenient ways to shop with us at LCBO.com, including Home Delivery in 2 to 5 business days, Deliver to Store in 5 to 14 days and Same-Day Pickup within 2 hours—now available at more than 370 stores across the province. As we approach the end of the year, we also take stock of the ways we have given back to the communities in
which we live and work—not to mention our plans for the future. Together with our customers and industry partners, the LCBO is making a meaningful impact and helping to create a more sustainable Ontario. I am filled with pride to share that in the recent fiscal year we transferred a $2.55 billion dividend to the Government of Ontario which helps fund key local and provincial public programs and services including health care, education and infrastructure, and we raised more than $16 million in charitable donations to support the health and well-being of Ontario’s diverse communities. I invite you to learn more about the work we do for the good of Ontario through the Spirit of Sustainability platform (between pages 120 and 121) and donate in-store between December 1 and 31 to raise money for Children’s Health. On behalf of the LCBO, I hope you have a happy and safe holiday season. And please remember that if you are drinking these holidays, do not drive. Do your part to keep our roads safe for everyone.

EDITOR’S NOTES
Celebrate the Season!
Whether it’s just one big event or several gatherings spread over the month of December, getting together with family and friends is an irrefutable part of the holiday season. Even if you’re not hosting, you’ll likely be asked to (happily) contribute in some way, and we hope this issue will help guide you down the path for choosing just the right dish or drink to serve or bring, whatever the occasion. First, we turn your attention to “Guest Stars” on page 124. When you are asked to bring something to a party, it’s usually a starter, side or dessert—or a drink. We asked Michelle Rabin to reimagine those courses in unique and flavourful ways that are sure to get you invited back. Focusing solely on side dishes, Irene Matys takes those to impressive new heights, starting on page 53—you’ll never serve microwaved veggies again. If you’d like to host a holiday dinner party but don’t feel confident in your cooking skills, “Hooked on Classics” (page 138) presents six festive dishes that will lay the foundation of
on page 219 has unique ideas for a range of seasonal celebrations. If there is any time of year where you dust off the baking equipment, it’s the holidays—and we say go ahead and indulge! Starting with four new recipes for your baking swaps on page 105, this issue has something for every level of experience and taste preference. There’s a budget-friendly chocolate fudge cake on page 92, an oh-so-trendy Basque Cheesecake flavoured with ginger on page 188, a snowy white take on an Australian Lamington cake full of the flavour of coconut on page 73, and, last but not least, a decadent Chocolate Cognac Tart on page 248 that makes for a grand finale at any feast. On behalf of the Food & Drink team, we wish you a safe, happy and delicious holiday season—please don’t forget to tag us in your celebrations!
your recipe repertoire and are also worthy of seasonal change-ups all year long. Or, better yet, spread the work around with friends to tackle the New Year’s Eve menu on page 146. If you’re not cooking, make an impression by gifting or serving something decidedly festive and special. In “The Sweet Spot” on page 160, James Chatto suggests just the right sweet wine to share with friends whether it be for starters or dessert. A festive cocktail is a great way to greet your guests; you’ll find drinks with the same beloved flavours as holiday treats on page 63, top-shelf cocktails for a touch of decadence on page 191, and five new mocktails starting on page 132 that look as delicious as they taste. For gifts, turn to our “Beginner’s Guide to Scotch” on page 115 for expert advice on how to choose a bottle; and for host gifts, “No Matter the Occasion”
From long-awaited reunions and festive feasts to some quiet time by the fire, each and every holiday moment is worth toasting. If you’re looking for a special gift to celebrate time spent with family and friends, look no further than the LCBO. It’s the destination for gifts that are at the heart of any occasion.

FOR THE HOST WITH THE MOST The Glenlivet 12 Year Old
Glowing like a bottle of old gold, The Glenlivet 12 Year Old is crafted to impress—and it does, as the most award-winning expression in the portfolio. Over the course of 12 meticulous years, Master Distiller Alan Winchester guides this single malt through a combination of cask types, resulting in a complex, elegant, and balanced Scotch whisky. Though the bottle deserves pride of place in any collector’s cabinet, it’s made for holiday sharing with notes of ripe citrus and winter spice, and a comforting toffee aroma.
NEXT-LEVEL GIFTING If the holidays have you feeling extra generous, consider surprising the discerning whisky drinker in your life and upping the stakes with The Glenlivet 14 Year Old, the latest expression from this legendary distillery.
FOR TOASTING SPECIAL OCCASIONS J.P. Wiser’s 10 Year Old
Velvety on the tongue and spicy on the palate (think: rich sultanas and warm cinnamon), J.P. Wiser’s 10 Year Old Triple Barrel lends itself to vibrant celebrations. This Canadian whisky is laid to rest for a minimum of 10 years, but the rich flavours are ready to savour in an instant. When your guests sip this apricot-coloured liquid, they’ll taste nostalgia: stewed red apples, homemade orange marmalade, honey, and butterscotch. J.P. Wiser’s 10 Year Old is a heartfelt gift and a moment to remember.
NEXT-LEVEL GIFTING Present a bottle with a pair of whisky glasses for an elevated festive experience.
Rabbit Hole Cavehill FOR SAYING “THANKS FOR EVERYTHING”
Fueled by creativity and a motto of “Find what you love and go all in,” this award winning four-grain bourbon whiskey has a unique depth of flavour, thanks in part to barrels that are slow-toasted over a wood fire. As you bring the glass to your nose, you’ll catch scents of fresh apples and inviting spices, and as you drink, your tastebuds will recognize honey, mint, vanilla, and creamy custard. A sip of Cavehill is like a warm hug on a crisp winter’s night.
NEXT-LEVEL GIFTING Add a homemade fruitcake or dark chocolate-dipped orange peels to complement Rabbit Hole Cavehill’s rich flavours.

SEASONAL SIPS Colour Code
From a splash of colour to festive garnishes, here are some fun ways to bring holiday spirit to your bar.
GREEN Whether you’re serving Vodka Sodas or Martinis, a splash of McGuinness Melon (LCBO 631234, $20.95) will turn clear drinks Grinch-green. You could also amp up a Gimlet or Daiquiri with a rim of green sanding sugar.
BLUE Blue is the colour of Hanukkah, and with a bottle of McGuinness Blue Curaçao (LCBO 631200, $20.95) in your bar, you can give Margaritas and Sidecars eight days of spirit. A rim of flaky sea salt or white coarse sugar will complement, adding icy sparkle.
RED Cranberry juice will turn most cocktails redder than Rudolph’s nose. Sub it in for OJ in a Mimosa or add a splash to a Gin and Tonic. You could also make a naturally red drink like a Negroni more festive with a few cranberries and a sprig of rosemary.
TREAT OF THE SEASON HIP TO BE SQUARE
Crunchy and chewy Rice Krispie squares are dead-easy to make and loved by one and all. For the holidays, we’ve infused the iconic treat with eggnog flavours then drizzled them with white chocolate and, for a final flourish, sprinkled on Cinnamon Toast Crunch cereal. It’s a fun no-bake treat to make with the kids and delicious with a cold glass of ’nog.

When it comes to gifting food and drink, baskets are out. “Instead, display them in a gift box,” says Corinna vanGerwen, a professional gift stylist based in Toronto.
“Use something with hard sides and a lid, and line it with paper crinkle shred. Lay everything down so you can see the labels and fill the gaps with more shred.” When choosing food and drink items, vanGerwen has a few tips: “Products should have nice packaging, not just taste good. And go for things that people aren’t necessarily going to buy for themselves.” Finally, decorate the box with seasonal embellishments, such as a sprig of greenery or ornaments. Gift-boxing has environmental advantages, as everything is recyclable or reusable, plus anyone can do it. “If you’re all thumbs, it’s a great way to wrap stuff.” You can find everything for gift-boxing and wrapping at creativebag.com, and for more gifting and wrapping ideas visit Corinna’s website at corinnavangerwen.com.

SUSTAINABLE OLEO-SACCHARUM 101
Before you juice up a big bowl of citrus, remember there’s also a lot of flavour trapped in those peels. The cocktail syrup oleo-saccharum (Latin for “oil-sugar”) is the key to unlocking it. The process is simple: strips of citrus zest (removed with a Y peeler to minimize bitter white pith) are mixed with sugar and allowed to sit. The sugar extracts the oils, and it turns into a potent syrup. Favoured by 19th-century bartenders, oleosaccharum will amp up punch, a French 75 or any citrus-based drinks including lemonade. Using our Lemon Oleo-Saccharum recipe (at lcbo.com/fdholiday22) as a blueprint, try your hand at concocting your own with a variety of citrus peels, from mandarin to lime to grapefruit.

ENTERTAINING Big Mix Up
Whether you crave a bar-quality drink at home or need a special gift, check out the premium bottled cocktails at the LCBO. New to the shelves, On the Rocks Effen Cosmopolitan (LCBO 26678, 375 mL, $22.95) uses Dutch vodka and natural ingredients to create the iconic Cosmo. Simply shake with ice and serve straight up with a lime wheel. For fans of darker spirits, Ontario-made BarChef Project The Toasted Old Fashioned (LCBO 546994, 375 mL, $28.10) blends Canadian whisky, maple syrup and toasted camomile for a balanced, complex libation. Just pour a serving into an ice-filled lowball and add an orange twist.
BAR HACKS HOW TO “VEGANIZE” YOUR COCKTAILS Thanks to the work of crafty bartenders, there’s no shortage of cool hacks for replacing eggs and dairy in cocktails these days. Here are four tips for plant-based mixing over the holidays. BY CHRISTINE SISMONDO 1 Most Hot-Buttered Rum calls for a “batter” made from sugar, baking spice, butter and ice cream. Skip the dairy and use a mix of virgin coconut oil and cashew milk instead. 2 Surprise your guests with a dairy-free version of Eggnog that’s every bit as decadent as the original but features a combination of coconut cream, full-fat coconut milk and oat milk. 3 A tangy Cranberry Fizz isn’t nearly as festive without a frothy, foamy top. Instead of egg whites, get the same effect with Versawhip (cocktailemporium.com), a modified soy protein. 4 For plant-based whipped “cream,” bartenders beat aquafaba (canned chickpea liquid) with cream of tartar, oil and sugar. It creates a rich, fluffy topper for Irish Coffee.

BAKING HACKS WONDER POWDER
If you love the flavour of browned butter in desserts, then you need toasted milk powder in your arsenal. More convenient than browned butter, it amplifies richness, while adding nutty caramel flavours. It also tweaks textures, making cookies chewier and cream-based desserts silkier. To make it, spread 1 cup (250 mL) dried milk powder on a parchment-lined baking sheet. Bake at 300ºF (149ºC), stirring occasionally, until evenly browned and toasty smelling, 12 to 15 minutes. Cool, transfer to an airtight container, and refrigerate up to 2 months. To try, start by adding 1 tbsp (15 mL) to the dry ingredients in your favourite dessert recipes. BY ESHUN MOTT
