YOU KNOW THE OLD ADAGE: if you want to find a good wine match for a dish, pick a wine from near where the dish originated. It’s a handy rule, and the more specific you get, the closer the affinity becomes. It also helps if attitudes are shared. For this story we chose three winemak- ers whose work we admire and then sought out an artisanal food producer based close to the winery, someone who goes above and beyond in terms of care and quality. Then we asked Jennifer MacKenzie to create a recipe using each of the foods we chose that would work beautifully with the wine. Can you actually taste the similar terroir? Perhaps it’s more of an intellec- tual appreciation. But it was a delicious experiment to conduct and gave us irre- futable proof that fine Ontario wines and fine Ontario foods were made for each other. Which is something we knew all along.
