As a region that is continuing to develop its character in the world of wine, Niagara’s identity is ever-changing. The largest wine-producing region in Canada built an industry with sweet wine and its ability to mimic warmer-climate counterparts. But in the last few years, individuality has become a central theme. While Niagara’s culinary scene continues to boom, wineries and winemakers are gaining a deeper understanding of micro climates and soil.     At the heart of today’s Niagara wine country is a group of forward-thinking growers and vintners, a new generation trying to extract as much flavour from mother nature as possible. They bring global experience and incredible passion. We sat down with some of these talented members of the industry who are steering Niagara in exciting new directions.
