An essential pantry staple and indispensable flavour booster, garlic is rarely thought of as a seasonal ingredient. However, when it’s lovingly grown and expertly cured (that is, dried), new-season garlic is something to be celebrated. This fall, when fat, fragrant heads of local garlic are in great abundance, dig into our collection of recipes in which the stinking rose takes top billing. There’s everything from a quick weeknight pasta with end-of-season tomatoes to a comforting casserole (pictured left), a garlicky mash-up of cassoulet and baked beans.
