A Taste of Honey From breakfast bowls to afternoon tea and salad dressings to grilled lamb, ultraversatile honey adds a little something special to almost any dish we can name. That’s true for drinks as well, which is why there’s a family of classic cocktails—Bee’s Knees and the Air Mail, for example— that call for honey syrup. It can also be used in place of other sweeteners in traditional recipes or to inspire new cocktail recipes, like this Peach Honey Balsamic Fizz, which calls for clover honey syrup and a chunk of “comb honey” (seasonally available raw, unprocessed

honeycomb) as a garnish.
TIP Honey doesn’t mix well with cold liquids, so bartenders use a simple technique (heating equal parts of honey and water) to thin it out, which makes using it in cocktails a snap.
