BUSY BEES Beekeeping is booming in Ontario, thanks to a swarm of entrepreneurs and hobbyists who’ve taken an interest in pol linators, especially the honeybees that produce this fascinating and diverse sweetener. It’s as brilliant in cocktails as it is in food recipes and as a condiment. From light, liquid clover honey to rich, dark and viscous buckwheat, there’s a wild range of expressions and styles of honey. It’s a true terroir product that reflects its region as well as the character of specific flowers, such as lavender, goldenrod and blueberry blossom.
