So many classic liqueurs are centuries old that it’s refreshing to find one that was invented as recently as 2007— by third-generation American distiller Robert Cooper. Some years earlier, the story goes, he was inspired by the way British mixologists were using elderflower syrup in their cocktails and so he set to work. St-Germain is the result, capturing the elusive aroma of elderflowers gathered by hand in the French Alps during their short blossoming. It’s hard to describe the taste of elderflowers—perhaps a mix between pear and lychee with a hint of lemon—but it’s there in spades in this sweet, delectable elixir. I like to mix a dash of St-Germain with some very cold dry cider for a refresh- ing mixed drink, but you’ll find it in all sorts of modern cocktails. And it does double duty in our St-Germain- Blueberry Summer Pudding recipe, enhancing the berries and making the whipped cream into something very special indeed.
