I remember a Chinese ginger-ginseng liqueur that disappeared from North Ameri- can markets in the 1990s. A few years ago, it was revived by an American company, but this time it’s made in France using Vietnamese baby ginger, Cognac, Provençal honey, ginseng and vanilla, presented in an elaborate bamboo-shaped bottle. It’s a lovely drink, heavy and honeyed with a gentle ginger heat emerging from beneath the smooth cloak of sweetness and lingering on the palate. Today’s bartenders have fallen heavily for its charms, partly because that sweetness means they don’t have to think about simple syrups or any other saccharine components for their latest creations. We’re using it to boost the flavour of ginger in our deluxe crème brûlée, but what can you do with the rest of the bottle?
