Dear Friends, The festive season is almost upon us, and the LCBO will be ready—and grateful—to play our part in all the celebrations across Ontario. This year we have a more varied and innovative array of seasonal products than ever, including advent calendars, multi-packs, different bottle sizes and gift packaging, plus a great range of sparkling wines to suit every occasion and budget. Look for them in our stores and online, or in our Holiday Gift Guide, which is available both digitally and in print; and of course, you can find a multitude of gifting and entertaining ideas right here in the pages of Food & Drink . This issue of the magazine also contains our newest Spirit of Sustainability (SoS) Impact Report. I am incredibly proud of the way the LCBO has taken the initiative in working towards a better Ontario, and of the success we have had in collaboration with our Good Partners in the industry, our dedicated employees, and with you, our generous customers. Together we have raised over $14 million in the last year alone. Our programs focus on every aspect of sustainability from the global environment to the workplace to local communities, with diversity, inclusion and equity always front of mind. At the same time, the LCBO delivered a $2.55 billion dividend to the Government of Ontario to support services such as healthcare, education and infrastructure. The report contains all the data and details and I think you’ll agree it makes for very uplifting reading. Meanwhile, the work goes on. Our Holiday Fundraising campaign gets under way on November 28 in support of Ontario’s four children’s hospitals—CHEO Foundation, Children’s Health Foundation, McMaster Children’s Hospital Foundation, and SickKids Foundation—together with Campfire Circle. Another resource you may find useful is a new page on LCBO.com—What’s On This Month at the LCBO. This is the place to discover all the great customer experiences we create each month, both in our stores and externally, including tastings, celebrity appearances, exclusive Vintages dinners and the many product discovery and educational events we’re launching this Winter. Happy Holidays!

No matter the occasion, at this time of year gifts will inevitably be a part of your celebrations. Whether you’re shopping for a host, the dog walker, a secret Santa or that person on your list who is impossible to buy for, this issue is packed with lots of great ideas for what to give. Gifting beverage alcohol can seem a little imper sonal—depending on the bottle, of course!—but we’ve thought of ways to make it more one-on-one. For cocktail fans, create a cocktail kit centered around their favourite drink, or something you think they might like to try. You’ll find four ideas to get you thinking, starting on page 89. For the foodies on your list, a homemade component is the ideal special touch—plus a few thoughtful add-ons and the perfect drink accompaniment. In “Taste of Home” on page 105 we offer three super-simple recipes plus the extras that are sure to make unforgettable gifts. Are there art, movie, music or sports fans on your list? Check out “Famous Players” on page 177 for creative gift ideas for them too. Drink of the Season SEASONAL SIPS

A Bombo (aka Bumbo or Bumboo) was originally a pirate riff on grog, the sailor’s ration of watered-down rum. The swashbucklers made it more interesting with the additions of sugar and spice. Our modern Bombo (p. 245) treats it more like an Old Fashioned, sweetening premium aged rum with demerara syrup and serving it over a big ice cube. ENTERTAINING Beer Up

This time of year, you can find dozens of mixed beer packs at the LCBO, perfect for trying new brews or adding variety to your holiday bar. Here are three of our favourites.

BAKING HACK Wisdom of Age HYPOTHESIS Chilling drop cookie dough before baking makes better cookies. Whether you call it resting, ripen ing or aging, chilling dough (for 30 minutes to 4 days) is a step many bakers swear by. It firms up the fat so cookies spread less, and lets the flour absorb more moisture and develop complex flavours. RECIPE Tara O’Brady’s amazing “Basic, Great Chocolate Chip Cookies” from her cookbook Seven Spoons (Appetite by Random House, 2015). TEST The dough is portioned with an ice cream scoop. Some are baked immediately, and the rest are chilled and baked in four stages— after 2, 24, 48 and 72 hours. RESULTS 2 hours: spread a little less, but no difference in flavour or texture. 24 hours: noticeably better—more even browning, deep butterscotch flavour and slightly chewier. 48 hours: no different from 24. 72 hours: didn’t spread as well. CONCLUSION If you have the time and patience— i.e., you’re not baking with kids— portion and chill drop cookie dough overnight for the best results.

The skyrocketing price of food has pushed more Ontarians to rely on food banks. If you’re looking to help, one of the most effective ways is by donating money or your time at organizations like Feed Ontario (feedontario.ca) and Second Harvest (secondharvest.ca). If you want to drop off non-perishable food at donation boxes, here are the 10 most in-demand items, according to the Burlington Food Bank (burlingtonfoodbank.ca)— cereal, soup, juice, granola bars, peanut butter, crackers; canned fruit, tomatoes and vegetables; and baked beans.

WHAT’S THE BEST WAY TO SERVE IT? Cognac is best served neat at room temperature. The traditional glassware choice is a snifter (aka balloon glass), which leaves plenty of room for swirling. True Cognac aficionados prefer a small er tulip-shaped glass—it’s narrow top concentrates the aromas, while the stem prevents your hands from warming it up. HOW DO YOU MIX WITH IT? Most top bartenders choose Cognac over other brandies for cocktails—its bold flavours and silky texture make more of a statement. VS is terrific in sours like a Sidecar. For stirred drinks like a Sazerac, it’s worth upgrading to VSOP, which will give it more body.

WHAT IS COGNAC? Cognac is a grape-based brandy produced in a region in western France near its name sake town. To ensure quality, it’s made un der Appellation d’Origine Contrôlée (AOC) rules. The wine base must be distilled twice in small copper pot stills then aged in French oak from Limousin or Tronçais. WHAT ARE THE DIFFERENT GRADES? There are three basic grades, each guar anteeing a minimum age for the youngest brandy in the blend. For VS (Very Special), it’s 2 years, and you tend to get more woody spice in the flavour profile. For VSOP (Very Superior Old Pale), it’s four, which brings out more fruitiness. For XO (Extra Old), it’s 10, and you can expect a heavenly sipper with layers of complexity.

Rum Balls Rum balls were created as a way for bakeries to upcycle leftover cake scraps. To make a state ment in these fudgy morsels, use an aged or dark rum. While chocolate sprinkles are the classic coating, you can roll them in everything from shredded coconut to chopped nuts. For an alcohol-free version, see varia tion at end of recipe. 1 1/4 cups (310 mL) whole milk 3 large eggs 1/2 cup (125 mL) unsalted butter, melted, plus more for pan 1 pkg (432 g) chocolate fudge cake mix 1/3 cup (80 mL) cherry jam 1/4 cup (60 mL) Dutch-processed cocoa powder, sifted 2 tbsp (30 mL) aged or dark rum 1/4 tsp (1 mL) fine sea salt 3/4 cup (175 mL) chocolate sprinkles 3/4 cup (175 mL) finely chopped pistachios 3/4 cup (175 mL) shredded coconut 1. Position rack in centre of oven. Preheat to 350°F (177°C). Generously butter a 9 x 13-inch (23 x 33-cm) baking pan. Line with parchment, leaving overhanging edges on two opposite sides for easy removal. 2. In a large bowl, whisk milk with eggs and butter until fully combined. Add cake mix, whisk ing vigorously until batter is very smooth. Transfer batter to pre pared pan, smoothing out top. 3. Bake on middle rack until a wooden skewer inserted into centre comes out clean, 30 to 35 minutes. Transfer to a wire rack. Cool completely. 4. Using parchment edges, lift cake out of pan. Cut cake into quarters. Roughly crumble

ALCOHOL-FREE RUM BALLS Increase cherry jam to 1/2 cup (125 mL), reduce cocoa that goes into rum ball mixture to 3 tbsp (45 mL) and replace rum with 1 1/2 tsp (7 mL) rum extract.

5. To form, line a baking sheet with parchment. Pour sprinkles, pistachios and coconut into separate shallow dishes or plates. Scoop 1 tbsp (15 mL) portions of dough and roll into smooth balls. Drop 1/3 of balls into sprinkles and roll to coat. Arrange on prepared baking sheet, about 1/2 inch (1 cm) apart. Repeat, rolling the next 1/3 of balls in pistachios, then the final 1/3 in shredded coconut. Refrigerate until chilled, about 1 hour. (Rum balls will keep, refrig erated, in a container between layers of parchment, up to 5 days.)

Continue mixing on low speed just until a dough comes together, about 1 minute. Crumble in remaining quarter of cake. Mix on low until combined, about 1 minute. Increase speed to medium-low and continue mixing until dough is very smooth, about 1 minute more. Cover bowl with plastic wrap and refrigerate until dough can easily be rolled into balls, about 30 minutes.

BUNDT 1 1/2 cups (375 mL) pitted, stemmed, diced Medjool dates, about 20 dates 1 cup (250 mL) boiling water 3 large eggs 1/2 cup (125 mL) unsalted butter, melted 1/4 cup (60 mL) fancy molasses 1 pkg (432 g) golden cake mix TOFFEE SAUCE 3/4 cup (175 mL) lightly packed light brown sugar 3/4 cup (175 mL) heavy cream 2 tbsp (30 mL) unsalted butter, cubed 1 tbsp (15 mL) fancy molasses 1/2 tsp (2 mL) vanilla extract 1/4 tsp (1 mL) fine sea salt 1. For the Bundt, combine dates and boiling water in a large bowl, ensuring dates are submerged. Tent with foil and let stand until dates are soft, about 30 minutes.

6. To serve, pour half of the tof fee sauce overtop of Bundt cake. Serve with remaining toffee sauce on the side.
