Funky Rum ’Shroomtail

Mushroom broth or con sommé (like our Umami Stock at LCBO.com/fdholiday23) complements aged Jamaican rum, which can have a funky, fungi note. Falernum is a syrup flavoured with almonds, gin ger, lime and spices that gives tropical drinks texture and flavour: find it and The Japa nese Bitters at alambika.ca or cocktailemporium.com. Find mushroom seasonings, like Simply Organic Umami Blends or Knorr Mushroom Flavoured Seasoning, at grocery stores (or bring back a Trader Joe’s Mushroom & Co. Umami season ing from your next U.S. trip!). Lime wedge Black salt, mushroom seasoning or crushed artificial bacon bits, for glass rim 4 oz mushroom stock or consommé, plus more for ice if serving cold 1/2 oz Falernum (or substitute 1/2 oz maple syrup and 3 dashes Angostura bitters) 1/2 oz lime juice ( 3/4 oz if using Falernum substitution above) 1 oz aged Jamaican rum, such as Appleton Estate 15 Year Old ( LCBO 19826, $84.50 ) 2 dashes The Japanese Bitters Umami (optional) Enoki mushrooms for garnish (optional)

VINTAGE BROTH TALES In 1955, a Campbell’s Soup on the Rocks campaign promoted chilled soups spiced up with lemon, seasonings, bitters and garnishes as refreshing alcohol free summer drinks. In 2021, modern Campbell’s Brothtails like a Thai Chicken Negroni and a Ramen Mezcal Margarita were a social media sensation!

FOR A COLD COCKTAIL: 1. A day before serving, freeze approximately 4 to 6 oz of mush room stock into ice cubes of any shape or size. Prepare a rocks glass as per step 1. 2. To serve, add stock, Falernum (or syrup substitute), lime, rum and bitters (if using) to the glass and stir. Add mushroom ice. Garnish with enoki mushrooms and serve. Makes 1 cocktail
