THE BEST BURGER is equal parts good food and junk food. It should taste like all of the great ones you’ve eaten—at diners, in your best pal’s backyard, and even that first fast-food burger you ate when you were five. And it should begin with the beef.    Sure, a burger’s not a steak, but that doesn’t mean that it can’t cook up like one, and taste like one too. Visit a butcher and have them freshly grind up a steak and some chuck for you and that’s exactly what you get—a seriously beefy patty that you can cook up

medium-rare, with just the right amount of fat to keep things juicy.    It’d be a crime to get too fancy with your toppings and hide that great beef. Stick with the classics and a killer burger sauce that does away with juggling bottles in favour of heaped spoonfuls of glory. Our secret sauce skews sweet but is balanced by a whack of glutamates, a.k.a. umami , courtesy of an unexpected ingredient. If your friends aren’t hovering before the burgers are ready, you’re probably following a different recipe.
