Rosés in bloom

The perfect summer wine, rosé is so food-friendly that we’ve designed a menu with a different bottle and style for each course, from appetizer through to dessert—just to prove the point!

Even if you can’t make it to Ibiza this summer you can still recreate its laid-back vibe with this simple menu. It’s inspired by the Spanish island’s abundance of fresh ingredients, and the most versatile of summer wines— rosé. A glass of fresh and vibrant rosé immediately puts you in a Mediterranean frame of mind, and the accompanying dishes are perfect for enjoying al fresco in the warmth of the summer sun. Some of the delights that grow around the Ibizan countryside are fresh figs, persimmons, olives, pomegranates, oranges, lemons and wild fennel, a lot of which have inspired the rosé- friendly dishes that follow.

Miraflors RosÉ This elegant rosé ( LCBO 367375, $17.60) is made with grapes common to both the south of France and Spain: Grenache Gris, Grenache and Mourvèdre, which goes by the name Monastrell in its Spanish version. The wine offers lots of bright red fruit notes that pair nicely with the tomato. It is the wine’s minerality, however, that makes it a great complement to the shellfish. It’s also light in body, which is always a great way to start a meal, leading into heavier wines as the meal progresses.
