BLACKBERRY FOOL WITH ROSÉ (P. 185) This spin on the iconic English dessert brings all the traditional flavours with a summery twist. The humble blackberry is transformed into a punchy compote thanks to the vibrant complexity of a fragrant rosé wine. To keep things light, a classic custard base is lifted with freshly whipped cream. Top it off with more berries and lemon zest for added texture and a citrusy kick. WHAT WE USED The crisp profile of an extra-dry rosé brings a bright freshness to the jammy blackberry compote without extra sweetness. We used Cave Spring Dry Rosé VQA (LCBO 295006, $15.95), a medium-bodied wine filled with floral notes and gentle acidity. With swirls of rosé infused blackberries rippled through a cool vanilla-bean custard, you’d be foolish not to make this dessert all summer long! A Splash of Rosé
Both custard and compote can be made up to 2 days in advance. Fools can be assembled up to 4 hours before serving.
