Sight for Sorbet Eyes
Sorbet ( sorbetto in Italian) is ice cream’s lighter cousin, as it’s made only from fruit purée or juice, water and sweetener. Fat-free, gluten-free and dairy-free, sorbet is the ideal base for summer cocktails, as it turns foamy and slushy when mixed with bubbly beverages. Find traditional pastel-coloured lime-, orange- and berry- flavoured scoops (sometimes all in one rainbow-coloured package!) in the frozen aisle of grocery stores alongside modern flavours, from açaí to passionfruit to coconut.
Generations of Italians cherish the refreshing, icy qualities of a foamy, tart Sgroppino (chilled vodka and frozen lemon sorbet, topped with Prosecco, see next page). Using the same formula of spirit, frozen sorbet and something bubbly—plus summery fruit flavours, you can create a whole season of quick, easy and brightly flavoured summer cocktails. Serve them with straws for stirring and sipping, or with long parfait spoons for scooping up the last bits of frozen goodness.
