Blushing Sparkler This sorbet drink emulates a Clover Club cocktail’s gin and raspberry notes, with a touch of fizz replacing the original drink’s egg-white foam. Any pink or red sorbet (such as vibrant red açaí or rosy strawberry) will work, though. For narrow flutes or glasses, use a melon-baller to create cute mini-scoops. If you’re making two cocktails, a 250-mL can of wine is the ideal size; to make a non-alcoholic drink, leave out the gin and select a de-alcoholized bubbly such as Nozeco Sparkling Rosé Dealcoholized (LCBO 36461, $11.45). 4 oz raspberry sorbet (1 large or 4 to 6 small scoops) 1/2 oz gin 4 oz sparkling rosé Fresh raspberries for garnish 1. Place scoop(s) of sorbet in the bottom of a flute or tall, narrow glass. Drizzle gin over sorbet.
