I really like the complex yet focused nose of light brioche/toast, hazelnut, lemon and green apple. This blend of 90% Geisenheim (a German hybrid of Riesling and Chancellor once grown exclusively in Quebec and Nova Scotia, but now grown in Ontario where it occasionally makes unattributed appearances in blends) and 10% Gamay is produced using the oldest of the sparkling-wine methods: pétillant naturel. Unlike the traditional method of Champagne, in which a dry wine undergoes a second fermentation in bottle, this wine is bottled while still fermenting. RUINART BRUT ROSÉ CHAMPAGNE AC, France ... intense nose of red apple, watermelon, and wild strawberry enhanced by hints of shortbread and spiced, almost curried, almond. Pure silk on entry thanks in part to brilliantly integrated acidity, it carries on its fairly full frame cream-splashed red berries with midpalate flashes of pomelo and peach; a faint trace of cucumber melds with candied ginger on the long finish.
