MAKING A POINT
Not every wine critic rates wines out of 100 points, but these days, quite a lot of them do. The 100-point system was popularized in the 1980s by wine critic Robert Parker Jr. in his publication The Wine Advocate and assigns each wine a score ranging from 50 to 100 points based on its overall quality and character as determined by a tasting evaluation. According to Parker’s rating system, a wine scoring 50-59 points is deemed unacceptable; 60-69 indicates a wine of below-average quality; 70-79 points, average quality; 80-89 points, above average to very good; 90-95 points, outstanding; and 96-100 points denotes a wine of extraordinary quality.

Full-bodied with a compact palate of fruit and spice that envelops the fine-grained tannins, turning more and more savory as the long finish progresses. This is tightly packed and needs a bit of time to unravel and show the full extent of its complexity. It’s tempting to drink now, but better to wait a couple of years. SAKE SAMPLER Made using a centuries-old technique, sake is an artful sip worth savouring.
It all starts with high-quality rice.
The practice of fermenting rice to create an alcoholic beverage began in China more than 7,000 years ago and appeared in Japan about 2,500 years ago. Initially, sake was enjoyed solely by Japan’s ruling classes and religious leaders. Between the 12th and14th centuries, rigorous experimentation and refinement of the production process developed what is essentially the uniquely Japanese style we’re familiar with today. This period also saw an increase in the amount of sake produced, making some styles available to the entire population, though it was typically served only on special occasions. Sake production is a painstaking affair. First, rice grains are milled/polished to remove their hard outer layers. Then the milled rice undergoes a special process whereby it simultaneously brews like beer and ferments like wine. Spirit (brewer’s alcohol) may be added to fortify the sake before it’s diluted with water. Water is a critical component to a sake’s quality, and many breweries are situated on or near springs that give their products a unique stamp. Of the many innovations in sake, the recent emergence of sparkling sake has been one of the most exciting. The drive to improve quality has continued unabated and includes the development of new types of yeast and rice and an eagerness to adopt new technologies. Today, Japan has around 1,400 breweries operating in 47 prefectures.

SAKE STYLES
Sake’s quality tiers are determined by the rice-polishing ratio. The lower the number, the more premium the sake.

JUNMAI sakes have a rice-polishing ratio of 70%, meaning 30% of the rice has been milled away. “Junmai” also indicates that no alcohol has been added. HONJOZO are polished to 70% or less but are a step up in quality from Junmai as they’re more fragrant and elegant; a refinement achieved via the addition of small amounts of alcohol. GINJO are polished to 60% or less. These are aromatic, complex, premium sakes. DAIGINJO are ultra-premium sakes with a polishing ratio of 50%. Alcohol is added to enhance the aromatic qualities. SPARKLING SAKE is produced by adding CO 2 to fully fermented sake or, like Champagne, an in-bottle second fermentation can be triggered. A third method, kassei nigori , sees the juice bottled with live yeast and the primary fermentation taking place in the bottle. Sparkling sake is refreshing, food- friendly, and typically lower in alcohol than traditional sake.

LOCAL TALENT OFF THE BEATEN PATH Even beyond the well-established regions, Ontario’s wine scene offers so much to appreciate and explore. Join us as we foray into our lesser-known local wine country and discover the dynamic producers and wines emerging there.

LOCAL TALENT
Nestled among the forested moraines, golf greens, ski resorts and spa retreats of the Hockley Valley in south-central Ontario is Adamo Estate Winery : a small boutique operation with vineyards planted to classic vinifera and hybrid grape varieties. Rounding out their portfolio of limited-run wines from estate vineyards are the Bistro series wines made with fruit from Niagara growers. The Bistro Red is a blend of Cabernet Franc, Cabernet Sauvignon and Merlot along with splashes of Malbec and Petit Verdot, with 20% of the wine matured for 10 months in French oak.
In the heart of Norfolk County near the shores of Lake Erie in southwestern Ontario, you’ll find Burning Kiln Winery : a family-owned affair on the site of a former tobacco farm that uses repurposed tobacco kilns in the production of its wines. The Cureman’s Chardonnay is made with hand-sorted, whole-cluster fruit grown on two vineyards that border Lake Erie. After vinification and ageing for nine months in French oak, the wine is bottled without any malolactic conversion for maximum zip and vibrancy.
A short 20-minute drive south of popular beach destination Grand Bend brings you to Shale Ridge Estate Winery & Cidery . Founded by third-generation farmers, it’s located on the shores of Lake Huron in southwestern Ontario. As the name suggests, they craft premium wines and ciders using fruit grown on their estate or neighbouring farms. Their SR Cabernet Sauvignon is unoaked, keeping the focus on the character of the fruit.
