The hard reality of climate change arrived on Domaine Bousquet’s doorstep on November 20, 2024, in the form of a devastating hailstorm. “We’ve never seen anything like this,” says president and co-founder Anne Bousquet. “We have people working in our winery that were born in Tupungato, who have never seen this happen before with such force, such power. It was extremely shocking. We had employees that were crying.” There was a lot of uncertainty about what toll the damage would take, but as the team completed the 2025 harvest, they discovered something extraordinary. “Our vines,” says Bousquet, “were totally resilient to this. Even though we had 30% of the vineyard affected, we still managed to produce more grapes this year than last. We strongly believe this resilience is thanks to the fact that we are organic, biodynamic and regenerative, and our vines are healthy.” Domaine Bousquet, Argentina’s leading organic and regenerative winery, has been organic for its entire 28-year history. As Bousquet puts it, “our vines have been organic and have never had any chemicals put into them since they were born.” Now, the winery is taking the next step and embracing regenerative agriculture. Practices like minimal tillage and cover cropping increase soil health by keeping carbon in the soil and out of the atmosphere. Biodiversity corridors between vine rows attract beneficial insects to predate vineyard pests, sheep trim vines and provide fertilizer, and composting closes the loop of the vineyard ecosystem. Says Bousquet, “quality wine, and organic, and regenerative, go totally hand in hand.” This sentiment was confirmed when Domaine Bousquet won the 2023 IWSC trophy for best red wine producer. “I was so proud of our team,” says Bousquet of the win. “I was so proud of our vines.”

LOCAL TALENT SEASON’S SWEET THINGS Icewine is a treat all year round, yet its perfect stocking- stuffer bottle sizes and knack for pairing with seasonal nibbles make it especially popular during the holidays. These four examples showcase Ontario Icewine in a range of stunning styles.

Vidal Icewine is the style that originally brought Ontario wine worldwide acclaim, thanks in part to the hardy Vidal grape’s propensity for enduring the wintry conditions required. Bella Terra Vineyards gives a nod to the style that started it all by crafting an Icewine using Vidal grapes naturally frozen on the vine. The fruit is harvested in winter at night when conditions are the coldest and thus best for separating the lusciously sweet, concentrated juice from the icy crystals that form inside the grape. Bella Terra’s 2024 vintage delivers all the jammy exotic fruit and honeyed notes for which the style is famous, while keeping brilliant acidity for balance.
While Vidal is the grape variety behind Ontario Icewine’s rise to fame, Inniskillin is the winery that made it happen. Their surprise Grand Prix d’Honneur victory at Vinexpo in 1991 not only caught the world’s attention, it also made Inniskillin synonymous with Icewine excellence. This tradition continues with their Niagara Estate Cabernet Franc Icewine, which takes advantage of Cab Franc’s resilience and ability to thrive in chilly conditions. Icewine made from Cab Franc has more tannin and structure than most of its white-grape counterparts, making it a delightful surprise for dedicated red- wine fans. Made from fruit harvested in January, the 2023 vintage was crafted in stainless steel to emphasize pure fruit character.
Another grape variety that seems to love the cold is Riesling. A signature of many Ontario vineyards, Riesling is known for its piercing acidity, which in the context of Icewine provides a fascinating counterpoint to the luscious sweetness. Icewine made from Riesling is also prized for its longevity, with the best examples capable of evolving for decades. Lakeview Cellars crafted their 2019 Riesling Icewine from fruit harvested in December and vinified in stainless steel, after which the wine was moved outdoors to undergo a natural cold stabilization. This wine has earned multiple awards in global competitions, including a Gold Medal at the 2022 International Wine Challenge.

What could possibly make Icewine even more festive? Adding bubbles, of course! The skilled winemaking team at Marynissen Estates puts a twist (or rather, a sparkle) on a classic by using Vidal grapes to make a sparkling Icewine. Fruit for the 2022 vintage was harvested from Niagara vineyards and pressed while frozen to collect the concentrated juice, which was then vinified and finished in a pressurized stainless-steel Charmat tank. Sweet and effervescent, this rare and fasci nating style will delight devotees of dessert wines and bubbly alike.
