DOURO Best known for Port, the iconic sweet wine, Douro has redefined itself as a go-to source for some of the most unique, in-demand dry wines in the world. Douro is one of the world’s oldest defined wine regions and was first officially classified in 1756. For more than 200 years, the DOC applied only to the region’s iconic Port wine, but in 1979 it was extended to include non-fortified table wines. Tradition is important here, and many Douro winemakers still use lagares : open stone (usually granite) tanks in which grapes are crushed pisa a pé , i.e., stomped by foot. Foot treading is a gentle method that keeps even the most delicate aromas and flavours pristine. The practice is used exclusively for premium wines. Douro is named for the Douro River, which plays a significant role in moderating growing conditions as well as necessitating the develop ment of Douro’s iconic terraced vineyards. Historically, the river also made it possible to transport Port wines from this remote, rugged region to Oporto for export. Portugal boasts around 250 indigenous grape varieties, and the Douro features more than 150 of these. This astonishing variety might suggest a confusion of styles, but winemakers focus on a handful of grapes. Touriga Nacional , Touriga Franca , Tinta Roriz ( Tempranillo ) and Tinto Cão provide a tasty foundation for their red blends; and Rabigato , Gouveio and Viosinho form the base of their dynamic white blends. Individual producers often then draw upon the wealth of indigenous grapes at their disposal to “season” these blends to reflect their own distinctive styles and terroir. STOMP INTO HISTORY IN

KIZAKURA IWAIMAI JUNMAI GINJO SAKE Kyoto, Japan
Beloved for its softness and fragrance, Iwai rice was first cultivated in 1933 in the Kyoto Prefecture and soon proved a variety capable of producing high-quality sake. Challenges around growing the rice saw it fall out of favour by 1973, but the quality was such that several producers thankfully stuck with Iwai. Modern advancements have seen produc tion of Iwai-based sakes increase in recent years. 46112 (D) 720 ml $26.95 1
