The Atlantic Ocean, and more directly the Bay of Fundy (home to the world’s highest tides), ensure cool temperatures, which help create the high levels of natural acidity needed for sparkling-wine production. Nova Scotia’s boutique- based wine industry is centered in the clay, sand and gravel soils of the Annapolis Valley. The Gaspereau Valley region is within the Annapolis Valley and follows the Gaspereau River east to west to the Bay of Fundy. Nova Scotia has one appellation wine: Tidal Bay, its signature white. Though each winery may develop their own unique take, strict rules of production and a rigorous evaluation process ensure that these wines reflect a distinct, consistent flavour profile. Bright, zesty and fresh, Nova Scotia’s sparkling, white and red wines are ideal for summer entertaining and dining.
