Since the mid-1990s this winery has been making wines in Allén, beside the banks of the Negro River. This comes from vineyards that are about 30 years old. 60% of the wine was aged in barrels for a year, and the rest, in concrete for a similar time. It’s a wine that offers the classic notes of blue fruits, like a bowl of blueberries, it’s juicy and fresh, the texture is very smooth, the acidity is friendly, and the flavors are deep. ... The wine was wild fermented and aged for 20 months in a mix of used and neutral French oak barrels before being bottled unfined and unfiltered. I love this old-style Cab Franc with its nose of minty/eucalypt, fresh red berries, graphite, wild blueberries, herbs and lifted barrel spices. For the last 25 years, daring winemakers have upped the ante, creating sophisticated wines that are natural partners for seafood. “Heroic”?

Though varieties like Riesling, Chardonnay and Pinot Noir are

The Atlantic Ocean, and more directly the Bay of Fundy (home to the world’s highest tides), ensure cool temperatures, which help create the high levels of natural acidity needed for sparkling-wine production. Nova Scotia’s boutique- based wine industry is centered in the clay, sand and gravel soils of the Annapolis Valley. The Gaspereau Valley region is within the Annapolis Valley and follows the Gaspereau River east to west to the Bay of Fundy. Nova Scotia has one appellation wine: Tidal Bay, its signature white. Though each winery may develop their own unique take, strict rules of production and a rigorous evaluation process ensure that these wines reflect a distinct, consistent flavour profile. “Blomidon” is a play on “blow me down” and references the Bay of Fundy’s high winds. Tidal Bay is the appellation for the signature white wine of Nova Scotia. Fabre was one of the pioneers in showing the world the qualities of Río Negro. Since the mid-1990s this winery has been making wines in Allén, beside the banks of the Negro River. This comes from vineyards that are about 30 years old. 60% of the wine was aged in barrels for a year, and the rest, in concrete for a similar time. It’s a wine that offers the classic notes of blue fruits, like a bowl of blue- berries, it’s juicy and fresh, the texture is very smooth, the acidity is friendly, and the flavors are deep.
