Short maceration/drawing off / Juice is given contact with red grape skins, but for a shorter time than in red winemaking. Saignée / Like short maceration, but with some juice removed early while the rest is kept for red winemaking. Blending / Mixing red and white wines together.

What’s the opposite of box-checking? It may very well be spelled “Hecht & Bannier.” The boutique Mediterranean winery released their first organic wine, Le Languedoc, in 2007, then spent the subsequent decades converting their entire line to organic viticulture. As of 2023, all their vineyards in Languedoc and Provence are certified organic by Ecocert. But they didn’t stop there. “The other thing we are very committed to is trying to understand the global impact of our winery,” says co-founder Gregory Hecht. “Since 2020, we committed to conduct a scope 3 carbon inventory. That was huge work, as you can imagine, but super interesting.” Scope 3 emissions, also known as life-cycle emissions, are those that arise across an organization’s entire value chain, before and after a product is delivered or consumed. Bottle weight was identified as a large driver of emissions, so they switched to lightweight glass and are developing a bottle-reuse program with some of their domestic distributors. “It’s a huge investment for us, but we have to do it. You have to experience it to understand every single problem, every single challenge. It’s a learning process.” To further reduce their carbon footprint, Hecht & Bannier partnered with 1% for the Planet to donate 1% of sales to environmental organizations. “We don’t buy offsets,” says Hecht. “We support associations which preserve natural carbon sinks.” The organizations they selected are Surfrider Foundation, who work to safeguard oceans; Des enfants et Des arbres, who pair schoolchildren and farmers for agroforestry projects; and Noé, who protect biodiversity in France and abroad. “The third step for us was B-Corp certification,” says Hecht. When Hecht & Bannier joined this robust, trusted program in 2022, they were the first winery in their region to be certified. They must recertify every three years. So why go through all this effort? “The first motivation is personal,” says Hecht. “I don’t eat tomatoes in December.” (If you know, you know.) The wines of Hecht & Bannier are held to the same high standards, and benefit from the same personal touch. “We always make wines that we love and that we enjoy drinking.”
HECHT & BANNIER LE LANGUEDOC 2023 AC Languedoc, France
“This wine is a great ambassador of our work. It really represents what the Languedoc is today. The idea was to preserve a lot of its Mediterranean character; to get spicy, to get fruit-driven, to get super fresh. It’s a red wine you can have in the door of your fridge, that you can have just a bit chilled with very simple dishes like pasta ragout, pizza, a good barbecue, or just on its own for people who enjoy sipping
a glass of red wine.” (Gregory Hecht) 89 points (jamessuckling.com) Medium-bodied & Fruity 251587

LOCAL TALENT MAP QUEST
Producer Thomas Bachelder reveals his meticulous exploration of Niagara and its complex terroirs through his acclaimed single-vineyard wines. Thomas Bachelder is the modern voice of Niagara’s ancient soils. One only need look at the extensive portfolio of wines he’s crafted over his impressive career to recognize the drive this Burgundy-trained Montreal native has for revealing terroir. Bachelder has famously made Chardonnay and Pinot Noir in Oregon and Burgundy, but it’s here in Niagara that his passion has dug the deepest roots.

LOCAL TALENT
For wine made in Niagara, brand (the who behind the wine) remains critical to consumer confidence. People find a wine they like by a particular producer and so they return to that producer, but as the Niagara wine region and industry have matured, customers are increasingly thinking in terms of the appellation when purchasing their wines. It’s a mark of a wine region’s success when place takes precedence, and place in Niagara is becoming increasingly clear. Producers, local press, and we here at Vintages have stressed an understanding of what to expect from the bottle when you see appellations such as Niagara Peninsula, Niagara Escarpment or Niagara-on-
the-Lake; and sub-appellations like Beamsville Bench, Twenty Mile Bench or Four Mile Creek. Bachelder is inviting us to go even further and think, as they do in Burgundy, in terms of specific vineyards like York, Kirby, Foxcroft and Saunders. Bachelder’s deep-dive exploration of Niagara’s unique terroirs, which he undertakes alongside his wife, Mary Delaney-Bachelder, has earned him international recognition. Modelling his approach on the template established in Burgundy centuries ago, Bachelder has been painstakingly mapping the entire Niagara wine region, revealing its varied, complex terroirs through
his Chardonnay, Pinot Noir and Gamay cru-quality, single-vineyard expressions. Barrels that just miss the mark for these top-flight wines are declassified and included within Bachelder’s multi-site Villages wines, which are themselves exquisite, refined, authentic revelations of Niagara. “The intent is to make pure, subtle, suavely textured wines that sing lightly and clearly of their vineyard origins, with as little makeup as possible – wines that are finely perfumed and tightly wound, offering the classic refined fruit and textured minerality of the delicate silt, clay and dolomitic limestone-laced ancient lakebed

VQA Beamsville Bench, Niagara Escarpment ... I love the rich and silky, creamy palate with yellow and orange-fleshed fruit, also wood spice ... Acids are firm and crunchy, framing limestone such as one sees in fine limestone expressions, red and white, from around the best parts of the world. Excellent length and depth. It’s a fine vintage for the Saunders ‘Haut’ and its over 30 year old vines, perhaps the best yet. Best from mid-next year. Tasted November 2024. CHARLY NICOLLE PER ASPERA CHABLIS 2022 AP
FRANCE – WHITE WINE
As per a label’s meaning, “Per aspera ad astra,” from rough roads to the stars. Reiterated because this is the crux of the Nicolle situation for proprietor Charly, he who has had to work hard to bring a mom and pop Chablis estate into the modern world. A very encouraging and duly impressive Chablis at the AC Villages level, searing and intense with enough flesh to expand on the palate in spite of the conglomerate Kimmeridgian and Portlandian elements desiring to dominate. Reels at first but then constructs a necessary balance to make this a very fine wine. Way to go Charly. Drink 2024-2028. Tasted November 2024.
