INTRODUCING FRACETTE: ONTARIO’S SPARKLING INNOVATION Niagara’s cool-climate growing conditions are perfect for creating the high natural acidity required for premium sparkling-wine production. This year there’s a thrilling new chapter in Ontario bubblies with the arrival of Fracette (frah-SET). Unique to Ontario, this dry sparkler is produced using an Icewine liqueur de tirage to kick o the second fermentation. The emergence of a new style is a rare, exciting event in winemaking. One that’s exclusive to a particular region is even more so.
