Ontario’s cool climate helps create wines with bright acidity and fresh avours of apple, pear and citrus, while some styles o er added richness and texture from oak ageing. I enjoy pairing local Chardonnay with perch, roast chicken, creamy pastas, or Ontario cheeses. What I appreciate most is its versatility. It works just as well at home for a casual weeknight dinner as it does around a table shared with family and friends. It’s also a great example of the quality and diversity of Ontario winemaking.”
