WILD WHISKY Bearface Triple Oak Canadian Whisky (LCBO 36885, $39.45) is matured in spicy Hungarian oak, red-wine French oak and American oak bourbon barrels. This complex, intricately blended corn whisky from B.C. has a luxurious finish that’s long on spice, toffee and dried fruit—perfect for a sipping cocktail like an Old Fashioned. 2 pitted, quartered Medjool dates 11/2 oz Canadian whisky 2 dashes walnut or other nut bitters Dehydrated orange slice to garnish Date-coconut candy (optional) 1. Muddle dates, whisky and bitters in bottom of a cocktail shaker. Fill with ice and shake until thoroughly chilled, at least 15 seconds. 2. Place a large ice cube or sphere in a tumbler and top with dehydrated orange slice. Strain drink through a cone-shaped fine cocktail strainer into serving glass. Serve with a date- coconut log, if desired. Makes 1 drink Date Old Fashioned An Old Fashioned is usually “built” or mixed right in its serving glass, but this method employs a cocktail shaker to infuse the whisky with dates, which act as the sweetener here to replace the simple syrup or sugar cube in the tra ditional cocktail.
