TAWSE SPARK QUARRY ROAD BLANC DE BLANCS BRUT SPARKLING 2016 6 VQA Vinemount Ridge, Niagara Peninsula, Ontario, traditional method This is a gorgeous blanc de blancs made in the traditional method, mature, yet also sprightly. Honeyed, sweet floral aromas precede flavours of red apples, dried lemons and zest, and orange marmalade on toasted brioche. Tangy acids add some verve and energy to the palate, while the finish is long lasting and complex, with a hint of wet stones emerging towards the end. Tasted November 2024. It’s wild fermented, aged on the lees in tanks for 24 months with a dosage of estate Chardonnay (5 g/L). It shows a light rosé colour and elegant bead in the glass followed by a nose of fresh red berries, red currants, lovely saline, brioche, flint and toasty notes. The palate reveals fresh picked raspberries, cherries, watermelon and toasty brioche with a rounded texture, elegant bubbles and length through the finessed finish. Can age this through 2030.
