Continue brushing slits with more oil mix- ture as needed for another 5 minutes or until potatoes are golden brown. Brush again before serving. 5 Sprinkle potatoes with pinches of coarse salt. Serve right away with grilled steaks, chops or chicken. Pass a shaker of malt vinegar for those who like extra tang. Makes 8 halves, from 4 to 6 servings TIP  Arrange potatoes, slit-side up, on a broiling tray. Brush with oil and vinegar mix- ture while broiling, every 5 minutes for 15 to 20 minutes or until crisp and brown. Brush again before serving.

Russets, a starchy potato, get particularly crispy with this method. These scrumptious tangy potatoes belie the ease with which they are prepared. Sprinkle them with fresh herbs that match the meat or poultry being grilled to serve alongside.
