This is the season when we take a moment to reflect on the last 12 months and look optimistically towards what lies ahead. It is a collaborative process designed to provide you, our customers, with innovative products and gifts for the holiday season. Celebrate the Season!

Whether it’s just one big event or several gatherings spread over the month of December, getting together with family and friends is an irrefutable part of the holiday season. Even if you’re not hosting, you’ll likely be asked to (happily) contribute in some way, and we hope this issue will help guide you down the path for choosing just the right dish or drink to serve or bring, whatever the occasion. First, we turn your attention to “Guest Stars” on page 124. When you are asked to bring something to a party, it’s usually a starter, side or dessert—or a drink. We asked Michelle Rabin to reimagine those courses in unique and flavourful ways that are sure to get you invited back. Focusing solely on side dishes, Irene Matys takes those to impressive new heights, starting on page 53—you’ll never serve microwaved veggies again. If you’d like to host a holiday dinner party but don’t feel confident in your cooking skills, “Hooked on Classics” (page 138) presents six festive dishes that will lay the foundation of

From a splash of colour to festive garnishes, here are some fun ways to bring holiday spirit to your bar.

SUSTAINABLE OLEO-SACCHARUM 101

Before you juice up a big bowl of citrus, remember there’s also a lot of flavour trapped in those peels. The cocktail syrup oleo-saccharum (Latin for “oil-sugar”) is the key to unlocking it. The process is simple: strips of citrus zest (removed with a Y peeler to minimize bitter white pith) are mixed with sugar and allowed to sit. The sugar extracts the oils, and it turns into a potent syrup. Favoured by 19th-century bartenders, oleosaccharum will amp up punch, a French 75 or any citrus-based drinks including lemonade. Using our Lemon Oleo-Saccharum recipe (at lcbo.com/fdholiday22) as a blueprint, try your hand at concocting your own with a variety of citrus peels, from mandarin to lime to grapefruit.

BAR HACKS HOW TO “VEGANIZE” YOUR COCKTAILS Thanks to the work of crafty bartenders, there’s no shortage of cool hacks for replacing eggs and dairy in cocktails these days. Here are four tips for plant-based mixing over the holidays. BY CHRISTINE SISMONDO 1 Most Hot-Buttered Rum calls for a “batter” made from sugar, baking spice, butter and ice cream. Skip the dairy and use a mix of virgin coconut oil and cashew milk instead. 2 Surprise your guests with a dairy-free version of Eggnog that’s every bit as decadent as the original but features a combination of coconut cream, full-fat coconut milk and oat milk. 3 A tangy Cranberry Fizz isn’t nearly as festive without a frothy, foamy top. Instead of egg whites, get the same effect with Versawhip (cocktailemporium.com), a modified soy protein. 4 For plant-based whipped “cream,” bartenders beat aquafaba (canned chickpea liquid) with cream of tartar, oil and sugar. It creates a rich, fluffy topper for Irish Coffee.

BAKING HACKS WONDER POWDER

If you love the flavour of browned butter in desserts, then you need toasted milk powder in your arsenal. More convenient than browned butter, it amplifies richness, while adding nutty caramel flavours. It also tweaks textures, making cookies chewier and cream-based desserts silkier. To make it, spread 1 cup (250 mL) dried milk powder on a parchment-lined baking sheet. Bake at 300ºF (149ºC), stirring occasionally, until evenly browned and toasty smelling, 12 to 15 minutes. Cool, transfer to an airtight container, and refrigerate up to 2 months. To try, start by adding 1 tbsp (15 mL) to the dry ingredients in your favourite dessert recipes. BY ESHUN MOTT
