BURGERS Whether you order a beef or veggie burger, the toppings are key. You’ll need a versatile red like Burgo Viejo Reserva 2020 or La Nerthe Les Cassagnes Côtes du Rhône-Villages 2023 .

LA NERTHE LES CASSAGNES CÔTES DU RHÔNE VILLAGES €‚€ƒ AOP, Rhône, France The tannins here are not too rigid, but they still cut through the fat of the meat. The bright fruit flavours, herbs and mixed spices augment the seasonings of the burger and the smoke and char flavours of the grill. 92 points (Kevin Davy, jamessuckling.com) Full-bodied & Smooth 494674 (XD) 750 ml $29.95 1

CHINESE Szechuan is often spicy, so think about pairing it with a wine with some sweetness, like Organized Crime Riesling 2024 . But if you order milder dishes, go for a sparkler like Celene Améthyste Brut Crémant de Bordeaux or a surprising match like González Byass Nutty Solera Medium Oloroso Sherry .

6 VINTAGES

GONZÁLEZ BYASS NUTTY SOLERA MEDIUM OLOROSO SHERRY DO, Spain Sherry with Chinese takeout? A question that demands a four-word answer: YES! YES! and YES! The oxidative nut, caramel and dried fruit notes of this Oloroso are perfect for soy-braised beef or chicken dishes. Just keep in mind

the high alcohol of Sherry and avoid spicy foods. 91 points (John Szabo, MS, winealign.com) Medium 35204 (S) 750 ml $21.95 1

ORGANIZED CRIME RIESLING 6 VQA Beamsville Bench, Niagara Escarpment, Ontario The mild sweetness of this Ontario Riesling helps soften the salty character of soy and oyster sauce and takes the edge o” the spicier elements in many Chinese dishes. Riesling is famously food-friendly and pairs with everything from sweet-and-sour pork to Kung Pao shrimp. 89 points (Brad Royale, winealign.com) Aromatic & Flavourful 213173 (M) 750 ml $21.95 2

CELENE AMÉTHYSTE BLANC DE NOIRS BRUT CRÉMANT DE BORDEAUX AOP, France, traditional method Crémant de Bordeaux is a great way to elevate mid-week Chinese takeout, thanks in no small part to the wine’s naturally high acidity. It’s perfect for cutting through fatty meats like pork or duck and is a superb counterpoint for oil and thicker sauces. 90 points (nataliemaclean.com) Medium-bodied & Flavourful 19031 (D) 750 ml $18.95 2

FRIED CHICKEN

MEIA SERRA DÃO ENCRUZADO Š‹ŠŒ DOC, Portugal, sustainable (Casa Santos Lima)

Fried chicken and fries make for a tasty, simple meal. But pair it with a Champagne like François Seconde Grand Cru Brut Rosé Champagne and you’ve got a scintillating, elevated dining experience. If you want a wine to keep the greasy goodness in check, Flat Rock Unplugged Unoaked Chardonnay 2024 or Meia Serra Dão Encruzado 2023 are great for keeping things lively and fresh.

Fried chicken is crispy and oily and needs a wine that can handle that. Encruzado has the generous, bright acidity to cut through that oil and stop the chicken from tasting greasy. And the minerality makes a delicious foil to the saltiness of the chicken and fries. 91 points (Courtney Humiston,

FLAT ROCK UNPLUGGED UNOAKED CHARDONNAY 6 VQA Niagara Peninsula, Ontario, Foundation Series, sustainable Crisp, fresh, unoaked Chardonnays like this one have the lift and zest to cut through the oils and crunch of fried chicken. The citrus flavours add a nice splash of lemon, while the absence of oak influence means the wine won’t overwhelm the dish. Light & Crisp 68015 (XD) 750 ml $19.95 2

Rosé Champagne might not be top of mind when you order fried chicken, but the pairing is electric. Champagne has the zesty character needed to keep the chicken from tasting greasy while refreshing and readying your mouth for the next crunchy bite. 90 points (William Kelley, robertparker.com) Rich & Complex 49293 (XD) 750 ml $77.95 2 New at Vintages

INDIAN Indian dishes, whether meat- or veggie-based, tend to be saucy, so you need wines with the acidity to handle them. For hotter curries, a sweeter wine such as Riesling will help tone down the spice. And for dishes with more moderate heat, something like Sidewood Shiraz 2022 will make a compelling match.

SIDEWOOD SHIRAZ Adelaide Hills, South Australia

Cool-climate Shiraz has the acidity to cut through creamier dishes like butter chicken, while the wine’s gentle peppery character and clove notes make good complements to popular Indian spices such as cumin and garam masala. Shiraz pairs best with mildly spiced dishes.

TACOS Tacos are nature’s carryall. They can hold beef, pork, chicken or fish along with all the toppings that you want to pack in there. With such a range of flavours and spice levels in play, you’ll want a wine with food-friendly acidity that can elevate the flavours or act as a palate-refresher. Try wines like Azevedo Loureiro Alvarinho 2024 or Jules Taylor Pinot Gris 2025. As a bonus, their characterful fruit will create an exciting taste interplay.

AZEVEDO LOUREIRO ALVARINHO ‚ƒ‚„ DOC Vinho Verde, Portugal Alvarinho’s lime flavours work like a squeeze of citrus, while the acidity is fresh and mouth watering. These attributes make it perfect for fish and also work with the other ingredients in the taco, like salsa, onions and cilantro. The moderate alcohol means it won’t super charge the hot-spice elements. 90 points (Claire Nesbitt,

JULES TAYLOR PINOT GRIS ‚ƒ‚† Marlborough, South Island, New Zealand For tacos, you need a wine with a bit of body and plenty of acidity as well as lifted aromatics to work with ingredients like onion and fresh herbs. This Marlborough Pinot Gris has a silky texture and the perfect mix of aromatics and fruit. 94 points (Sam Kim, wineorbit.co.nz) Aromatic & Flavourful 36866 (XD) 750 ml $22.95 2

SUSHI With a wide range of flavours and styles, sushi is a delightful option any day of the week. For a classic match, try Dewazakura Dewanosato Junmai Sake . You can also look to a white wine such as a dry Chenin Blanc, whose vibrancy, texture and complexity will work with the varied flavours. Or, if you want a bold, surprising dynamic, try a light, delicate Pinot Noir.

DEWAZAKURA DEWANOSATO JUNMAI SAKE Yamagata, Japan

One of the easiest ways to make a great pairing is to match your beverage of choice with food from the region or country that produces it, like sushi and sake. Since they’re made from the same main ingredient (rice) and share an umami character, they’re naturally complementary. Gold (International Wine Challenge) 36555 (D) 720 ml $26.95 1 New at Vintages

Take the mystery out of wine pairings for takeout

• Try your favourite wines with your favourite foods. Wine is not an add-on to a meal, it’s an integral part of the dining experience. • Pair wines with foods or styles from the same region/country. • Though your own preferences are always the most correct, a general rule is to pair light wines with lighter fare and heavier wines with bolder foods. This basic approach applies to both meat and vegetarian dishes. • Takeout can be quite decadent, with many oerings leaning hard to the fried and oily sides, so wines with zesty acidity, freshness and lift will work best to cut through the richness and cleanse the palate. • Mix and match upscale wines with casual takeout. Great wines make good meals superb!

THAI For spicier Thai curries, go for o -dry wines such as Domaine Welty Bélénus Gewürztraminer 2023 . The sweetness will help temper the heat of the food. For more aromatic and mildly spiced dishes, try aromatic whites like Mega Spileo Assyrtiko 2024 , or wines that emphasize bright red fruit like Redstone Gamay Noir 2022 .

14 VINTAGES

REDSTONE GAMAY NOIR 6 VQA Lincoln Lakeshore, Niagara Peninsula, Ontario Gamay’s light body, gentle tannins and bright fruit give it excellent flexibility with food, particularly beef, chicken, pork or vegetarian stir-fries. It’s best to avoid very spicy meals, as Gamay will amplify the spice

rather than soothe it. Light-bodied & Fruity 44514

DOMAINE WELTY BÉLÉNUS GEWÜRZTRAMINER AOC Alsace, France

Thai food is all about spice, aromatics, sweetness and texture, and surprise, surprise, so too is this Gewürztraminer. MEGA SPILEO ASSYRTIKO PGI Achaia, Greece This Assyrtiko was partially fermented in oak, giving the wine some additional weight and depth. This, alongside the bold fruit, minerality and bright acidity, makes it a great match for the complex, generous flavours in Thai food. It will work beautifully as a palate-refresher and is ideal for green curries and seafood stir-fries. Aromatic & Flavourful 31680 (XD) 750 ml $21.95 2

PIZZA Is there anything better than pizza? Something that awesome and fun deserves an equally fun, awesome wine, and Hinterland Borealis Rosé Mini Sparkling 2024 is just the ticket. You can make a gourmet pizza or a simple pepperoni pie pop with Viberti Giovanni La Gemella Barbera d’Alba 2023 or Quercecchio Brunello di Montalcino 2021 .

HINTERLAND BOREALIS ROSÉ MINI SPARKLING Š‹ŠŒ 6 VQA Ontario, Charmat method

Bright, bouncy and fruity, this sparkling rosé is a great palate-cleanser and makes the pizza feel lighter as you eat it. The bubbles keep your mouth feeling engaged and fresh and, combined with the high acidity, mean that this wine will pair with everything from a vegetarian to a meat-lovers’ pizza. And honestly, it’s just fun. Medium-bodied & Flavourful 52475 (D) 250 ml $7.95 1 New at Vintages

VIBERTI GIOVANNI LA GEMELLA BARBERA D’ALBA DOC, Piedmont, Italy, sustainable The medium-bodied character of Barbera d’Alba makes it an easy match for pizza, which is never heavy in the way burgers can be. Barbera d’Alba is versatile and flexible, which means it will work with a variety of toppings. Meaty, veggie and spicy, it complements them all. 92 points (Megha Jandhyala, S.J.D., winealign.com)

QUERCECCHIO BRUNELLO DI MONTALCINO

DOCG, Tuscany, Italy Brunello di Montalcino is a big wine, so you’ll want to pair it with a hearty pizza. Feelin’ Grü-vey

Austria’s signature white wine grape, Grüner Veltliner (GREW-ner velt LEE-ner), is quite a character. Sure, it’s got a bit of Sauvignon Blanc’s herbaceous aromatics, a bit of Riesling’s mineral expression, and a bit of Gewürztraminer’s lively spice – but really, Grüner’s got its own thing going on. Vibrant, food-friendly and best served lightly chilled, it’s also perfect for summer. Here’s your chance to check out Grüner from four di†erent Austrian regions.

LOCAL TALENT PERFECT POURS FOR BURGER NIGHT It’s peak grilling season, so get your local flavour on with these patio-perfect red and rosé wines from Niagara. We paired each one with a burger recipe from our summer issue of Food & Drink to get you started.

Niagara’s outstanding 2020 vintage produced fruit of remarkable quality and ripeness. Creekside took full advantage of the vintage in crafting their Red Tractor from a blend of 47% Cabernet Sauvignon, 46% Merlot and 7% Cabernet Franc all sourced from sunny Niagara-on the-Lake vineyards. Each variety was vinified separately in stainless steel before blending, after which the final blend aged for 16 months in oak barrels. Still beautifully balanced and full of lively fruit six years on, the wine showcases rich blackberry and black raspberry along with

complex layers of forest floor, leather, chocolate and spice. Wending Home built their 2021 Wending South from an eclectic blend of 38% Cabernet Franc, 32.4% Dornfelder, 24% Gamay and 5.6% Lemberger (a.k.a. Blaufränkisch). The Cab Franc contributes body, structure and rich red fruit; Dornfelder brings softness and dense, dark fruit; Gamay lends sleekness and spice; and the splash of Lemberger adds brightness, fine tannins and earthy notes. In the glass, the finished wine is sleek and spicy with notes of red

cherry, raspberry, campfire smoke, forest floor and green peppercorns. Featherstone ’s 2023 Gemstone is light on its feet yet full of flavour. A blend of 57% Cabernet Franc and 43% Merlot, it was vinified in stainless steel with full malolactic conversion before spending a two-month stint in oak barrels. All of this led to the wine’s satiny texture and vibrant fruit character. Fine and delicately framed, it serves up plum, brambly raspberry, dark cherry and lovely savoury herbal notes, along with a kiss of oak spice.
